For Fabulous Gels
There's a great new quick way to make' beautiful clear gels
with real fruit flavors, using any fruit juice, or fruit punch
concentrate in the frozen state, except pineapple. An envelope
of unflavored gelatine is the key to turning out these short cut,
delightful gels that will be ready to eat in 30 to 45 minutes. The
variety is yours to choose in flavors that please your family
best.
Quick Concentrate Gels
1 envelope Knox 1 can (6 ounces) frozen
Unflavored Gelatine juice or punch
cup cold water concentrate, kept frozen*
cup sugar 3i cup ice water
1. Sprinkle gelatine over cold water in medium saucepan.
Place over low heat; stir constantly until gelatine dissolves
(until there are no visible granules), about 3 minutes. Re-
move from heat.
2. Stir in sugar.
3. Add frozen concentrate and stir until melted. Stir in ice
water.
4. Pour into individual dishes or 2-cup mold or bowl. Chill
until set.
Makes: 4 servings.
*FROZEN JUICES: Choose from orange juice concentrate,
orange-grapefruit, tangerine, grape or apple juice concentrate,
or fruit punches. Do not use frozen pineapple juice or punches
containing pineapple juice.

1 /2 pounds; corn on the cob, 6 -
12 ears; green beans, 1 1 /2

(2 - 10 ounce packages); swiss
chard, 2 po'undS; turnip or
rutabaga, 2 - 2 1 /2 pounds;
yellow beans, 11 /2 pounds.
For example to -serve frozen
peas once a week for 25 weeks
you will require 25 pounds of
shelled peas and these should
be packed into 25 one quart
containers or 50 pints.

Just Can't Beat A&P WEO Meat ! Vegetables, fresh from the
garden, are indeed marvellous
foods. How nice it would be to
have them all year round. Im-
possible of course, but, you can
have the next thing to taking
vegetables in season from the
;garden to your • freezer.
With the; exception of salad
vegetables such as radishes,
celery, cucumbers, tomatoes
and salad greens which lose
their crispness during freezing,
most vegetables freeze well.
The ideal would be to freeze
enough vegetables for use when
fresh ones are unavailable.
Fresh potatoes, cabbage,
carrots, turnip and spinach are
available all winter at a
reasonable price, thus it is
wiser to save your freezer space
for such vegetables as green
and yellow beans, broccoli,
brussels sprouts, green peas,
corn on the cob and kernel
corn, asparagus, swiss chard
and cauliflower.
The home economists,
Agriculture Canada, have,
several recommendations to
help you calculate the quantity
of each vegetable to freeze for
next winter. These recommen-
dations are based on six ser-
vings which should feed a
family of four to six, depending
on appetites, likes and dislikes.
First of all, allow six servings
of each vegetable per week (one
serving equals one-half cup or 3

cereals. But its rich. nut-like
flavor makes it a versatile
cooking ingredient also.
Here are a few ideas for
using wheat germ in your own
recipes to turn them into
something special. For a
casserole topping, saute wheat
germ in melted butter or
margarine and sprinkle on the
casserole before baking. Toss a
few tablespoons of wheat germ
with salad greens for an in-
teresting combination. Try
scrambled eggs a la wheat
germ. Use one tablespoon for
every two eggs. Mix it in while
scrambling the eggs. For a meat
loaf or hamburger patties
wheat germ is ideal as a meat
extender. Add one-quarter cup
wheat germ and two
tablespoons liquid to one
pound of ground meat.
GRANOLA
6 cups quick-cooking rolled
oats
1 cup unsweetened wheat germ
1 cup finely chopped blanched
almonds
1/3 cup sesame seeds
1 cup flaked coconut
3/4 cup oil
1 1/2 cup honey (1 pound)
Combine first five
ingredients. Add oil and honey
and mix well. Spread cereal
thinly on large flat baking
pans. Bake at 250° F until
golden brown, (about 1 1/2
hours) stirring every 15
minutes. Cool. Pack in covered
container. Serve plain or with
milk. May be stored at room
temperature ,6 weeks. Makes
about 14 cups.
WHEAT GERM
WHOLE WHEAT MUFFINS
1 cup all-purpose flour
4 teaspoons baking powder
1/2 teaspoon salt
1/2 cup brown sugar
1 cup whole wheat flour
1/2 cup unsweetened wheat
germ
1 beaten egg
1 1/4 cups milk
1/4 cup melted shortening,_
Stir first four ingredients
together. Stir in whole wheat
flour and wheat germ. Combine
egg, milk and shortening; stir
quickly into flour mixture until
mixed but still lumpy. Fill
greased muffin tins two-thirds
full and bake at 375°F until
browned (about 30 minutes).
Makes 12 medium muffins.
