Serve over rice with bananas. Makes 4 servings. *Note: Puncture eyes of coconut with ice pick or screw- driver and hammer; drain and use as desired. Bake empty coconut at 400° for 15 minutes. While coconut is still hot in- sert long screwdriver through eye of coconut until it reaches the other side. Hit screwdriver with hammer to split coconut. Scrape meat from shell with sharp knife.
