There is a special feeling
about the end of the year
holidays and the customs and
traditions that are part of them.
One •of the nicest customs is
giving; one of the nicest gifts is
something you have made your-
self,
To many of us a slice of fruit-
cake studded with jewel-like
fruit is the sweetest symbol of
Christmas, and the holidays
would lose some of their
significance without it, Fruit-
cakes make a wonderful Christ-
mas remembrance for friends
and neighbors and can often be
the answer to gifts for those who
seem to have everything,
There was a time when fruit-
cake making was a laborious af-
fair. The colonial housewife of-
ten had to candy her own fruit,
shell, blanch then dry her own
nuts and make her own
flavorings. Sugar was bought in
cone-shaped loaves weighing
about ten pounds and hunks
bad to be broken off, pulverized
and sifted. Flour had to be dried
before the fire, spices pounded
to a powder, fruits and nuts
chopped and slivered and
raisins cleaned, washed and
seeded by hand (usually by one
of the children).
Currants came with stems as
well as stones, leaves and other
debris unsuited fcr these quality
cakes,
There was so much work, just
preparing the ingredients took
days, with most of the family
taking part. And the cost of
preserved and candied fruits
and the rareness of spices made
these cakes a luxurious once-a-
year item in many households.
Understandable that the preser-
ving powet of liquor was used in
liberal quantities so the
housewife could rest assured
that the fruitcake, such a job to
make, would last a long long
time!
Though there'may be wome,,
who still enjoy these ancient
traditions most of us today
prefer to buy the nuts and fruits
already prepared. This recipe
from the Dairy Foods Service
Bure,au takes advantage of all
the work done by food manufac-
turers and is very simple to

of the Royal Agricultural Win-
ter Fair's 50th year celebrations,
November 10 to 18, 1972,
The ROMP will perform their
intricate figures and confor-
illations to music during each
performance of the Royal Horse
Show in the main Coliseum
Arena at this year's Fair,
John E. Moles, RWF general
manager said the Musical Ride
is one of many special attrac-
tions for visitors to the Royal in
its 50th year. The Fair began in
1922 which makes it 50 years
old this year. However, the ac-
tual 50th show will not be until
1978 as the Fair operation was
suspended so the building could
house troops during World War
II, -
The RCMP Musical Ride
celebrates its 96 year in 1972,
The RCMP Centennial is in
1973,
In the last three years the
famed mounted troop has made
350 performances before a total
audience of three million in five
countries - Canada, the U.S.,
Bermuda, the United Kingdom
and Japan during Expo '70.

The first half of the perfor-
mance is executed at the trot, af-
ter which the troop forms up at
the halt in extended order, and
while the horses enjoy a
breather, engages in a series of
combat exercises with lance.
Moving off at the canter, the
troop runs through a number of
other figures before forming up
at one end of the enclosure in
two ranks for the finale, the
Charge. In the Charge, the
trumpet sounds, launching the
troop at the gallop down the
arena, front rank with lances at
the "Engage". Again the trum-
pet sounds and the Rally sends
the flanks wheeling outward to
lead the troop back into for-
mation for the March Past and
ceremonial salute.

least four weeks old so it ,you're
mailing fruitcakes, wrap them
as described in the recipe below
and send in airtight tins or
plastic containers. If more than
two weeks will elapse before the
cake will be eaten, enclosed
directions for resoaking the
cloth. A nice touch is to enclose
the recipe for a glaze or your
own special almond paste and
white frosting.
If you've time to age and
decorate the cakes yourself, find
a pretty basket, an antique
pressed glass dish or handy
storage container in which to
deliver your gift. Decorate with
bows, ribbons and gilt seals and

HOLIDAY FRUIT CAKE •
-(Makes One 8 x 8 x 3-Inch
Cake)
2 cups (1 pound) diced candied -
Pineapple
1 /2 cup (1 /4 pound) diced candied
citron
1 /2 cup (1 /4 pound) diced candied
orange peel
1 /2 cup (1 /.4 pound) diced candied
lemon peel
2 cups (1 pound) whole candied
cherries
1 cup (1 /2 pound) dried apricots,
cut in halves
11 /4 cups (1 /2 pound) light raisins
1 cup (1 /4 pound) whole Brazil
nuts
1 cup (1 /4 pound) pecan halves
‘,1 /4 cup (1 /4 pound) blanched
slivered almonds
1 /2 cup brandy
2 cups sifted all-purpose flour
1 /2 teaspoon salt
1 teaspoon baking powder
.1/4 cup soft butter
1 cup sugar
3 eggs
1 teaspoon almond extract
Day Before: Combine all
fruits and nuts with brandy in a
large bowl. Mix, well. Cover and
let stand at room temperature
overnight.
Next Day: Preheat oven to
275°F. Line one 8 x 8 x 3-inch
pan with two layers of greased
brown paper cut to fit pan. Sift
together the flour, salt and
baking powder, Cream butter;
gradually beat in sugar. Add
eggs, one at a time, beating in
well after each addition. Mix in
almond extract. Add sifted dry
ingredients, part at a time, to
creamed mixture, combining
lightly after each addition, Add
batter to fruit and nut mixture
and mix well. Turn into
prepared pan, spread evenly.
Bake in preheated oven about
31 /2 hours.
Cook in pan on wire rack 20
to 30 minutes. Remove cake
from pan and peel off paper.
Cook completely. Wrap in a
clean cloth moistened with
brandy, then plastic wrap and
