HARVEST FESTIVAL—
DAY OF BREAD
There are few holidays which apply to all Canadians. Thanks-
giving is one of the exceptions.
The first Thanksgiving in North America that the Pilgrims
celebrated was much different than our celebration of today.
The Pilgrims, with the help of friendly Indians, turned their
available foods into appetizing dishes. Some of these still re-
main, though in slightly different forms.
Remember when planning your menu that turkey, cranberries
and pumpkin are the traditional foods of Thanksgiving.
Both the bread for the turkey stuffing or ready-made stuffing
and pumpkin pies are available from your local bakery or super-
market. We certainly have a much easier time preparing
Thanksgiving dinner than our forefathers.
October third, 1972 is a special day for Canadians—the
Tuesday of Harvest Festival Week, just before Thanksgiving Day
—because it is the International Day of Bread throughout the
world, and being celebrated for the first time in Canada.
Orange Pumpkin Pie
1 baker's pumpkin pie fresh orange sections
1 pint whipping cream grated orange rind
sugar to taste
Whip cream, fold in last 3 ingredients.
Thanksgiving Pie
1 baker's pumpkin pie Rum Butter Nut Sauce
1 pint whipping cream, whipped
Rum Butter Nut Sauce
Yield: 11/2 cups sauce
1 tablespoon cornstarch
1/3 cup sugar (brown)
1/8 teaspoon salt
2 tablespoons water
1 egg yolk, beaten
11/2 teaspoons butter
11/2 teaspoons lemon juice
1/2 teaspoon grated lemon rind
2 teaspoons rum
1 egg white stiffly beaten
1/2 cup chopped nuts
Combine first 4 ingredients in top of double boiler; cook over
hot water until thick, stirring constantly.
Gradually add cornstarch mixture to beaten egg yolk, return
to pan, cook 5 minutes stirring constantly; remove from heat,
add butter, cool.
Add lemon juice, lemon rind and rum.
Fold beaten egg white into sauce; mix in nuts.
Serve hot or cold over pumpkin pie.
Walnut-Apple Stuffing
Yield: 6 cups
1/2 cap butter 1/4 cup chopped parsley
1 cup walnuts, coarsely chopped
Salt, black pepper and
1/2 cup chopped onion poultry seasoning to taste
1/2 cup chopped celery Broth or cider
4 cups dry bread crumbs
2 cups peeled and diced
tart apples
Sauté walnuts, onion and celery 5 minutes.
Add next 3 ingredients and seasonings, mix well.
Moisten as necessary with cider or broth.
Refrigerate until ready to use.
Use to stuff turkey or bake in muffin cups in a 350°F oven for
25 minutes.
Cranberry Sauce
1 pound (4 - 41/2 cups) cranberries 2 cups sugar
2 cups water
Check over berries, discard soft ones and any stems.
Wash well, place in large pot with 2 cups water and sugar.
Bring to boil, cook 10 minutes or until berries have popped
open.
Skim foam from sauce — pour into 4-5 cup mold and chill
thoroughly.
Note: 1/8 cup grated orange rind may be added with the
cranberries.
Broccoli and sliced turkey combine with a savoury Holland
imported Gouda sauce in an easy variation on an old classic
main dish.
Gouda Divan
LCAL or imported broccoli
can now be had throughout
the year. A delicate vegetable,
it takes on new character as a
main dish when combined with
sliced turkey or chicken en-
robed in a rich sauce. You will
find Holland imported Gouda
ideal for the sauce since it does
not become ropey or stringy in
the sauce and forms a good
crust when broiled.
1 bunch broccoli
6 large slices cooked turkey
salt and pepper
I cup cooked rice
OA cup raw)
2 tablespoons butter
2 tablespoons flour
i cup milk
nutmeg
14 otincet grated imported
Holland Ganda cheese
Cook broccoli quickly in a
large amount of water. Refresh
with cold water and drain.
Arrange turkey in the bottom
of a large, flat casserole. Spoon
well-seasoned rice over turkey.
(Rice tastes better if cooked in
chicken stock). Place broccoli
spears on top. Season with salt
and pepper.
Melt butter. When bubbling
add flour. Cook and stir for a
moment or two, taking care not
to let it brown. Turn off heat
and add milk. Beat until
smooth and cook over medium
heat until thick. Season With•
salt, pepper and nutmeg, Fold
in 1 ounces grated Gouda
cheese. Pour sauce over broc-
coli and sprinkle with remain-
ing Holland imported Gouda
cheese. Bake in a 375° oven for
30 minutes, then brown cheese
tinder the broiler.
Serves 6.
