Did you know that cheese was so highly prized in ancient time that it was used as a form of currency? Although we can no longer. barter our goods and ser- vices with cheese today, we should consider its value in nutritional terms. Cheese is a concentrated form of milk and contains all its most important nutritive elements calcium, protein and riboflavin. Because flavor and texture vary with each type of cheese, some are better than others for cooking. Mozzarella anci.Ricotta are popular for making sand- wiches, casseroles and sauces, Swiss and Gruyere are an ex- cellent choice for fondues, and grated Parmesan and Romano add a tang to spaghetti dishes and casseroles. Because cheese is so versatile it combines well with many foods and is a natural with pastas (macaroni products). Pastas are all basically made from wheat flour; the only dif- ference lies in the great variety of shapes and sizes from which to choose such as flutes, rings, shells and alphabets. Pastas cer- tainly add a decorative touch all their own but they'may serve a practical purpose as well, as is the case with jumbo macaroni which is large enough for stuf- fing. For satisfying hearty appetites the home economists of Agriculture Canada suggest you try these one-dish meals 4 ounces uncooked jumbo macaroni shells Water and salt according to package directions 2 cups (16 ounces) cottage cheese 1 cup (4 ounces) ,grated Canadian mozzarella cheese 1 egg 3 tablespoons dry bread 2 tablespoons chopped fresh parsley 1 tablespoon chopped chives 1/2 teaspoon salt 1/8 teaspoon pepper 2 cups prepared spaghetti sauce 1 'tablespoon sugar 114 cup grated Canadian par- mesan cheese Cook macaroni according to package directions.
