This nine-year-old Indian boy is pleasant, cheerful and outgoing, making friends readily with people of all ages. Malcolm is a good-looking lad with dancing dark eyes, black hair and medium complexion. A healthy youngster, he delights, in outdoor activities. He enjoys camping and is keen on sports. Malcolm is an average student in Grade Four. His special interest is art and he draws outside the classroom as well as in. He is a good mixer with many friends both at day school and Sunday School. Foster parents and teachers agree that Malcolm is cheerful and co-operative, and his Children's Aid Social Worker adds that he is quiet, likeable and well-adjusted. The first cottage cheese made, according to legend, was done so accidentally by an Arabian merchant, He put his milk supply into a pouch made of a sheep's stomach and set off across the desert on a long day's journey. By nightfall, the milk had separated into curd and whey, aided by the heat of clay and the rennet in the pouch. He drank the whey and ate the curd. That curd is what we call "cottage cheese". Nowadays cottage cheese is sold in two different styles, as dry curd or creamed. Dry cottage cheese is simply the curds of cheese with no cream added, Creamed cottage cheese has cream added to the curds to give a creamier product, and a milkfat content of at least 4 per cent. Creamed cottage cheese is often sold with added relishes or seasonings. Two per cent cottage cheese may also be available under different brand names; it has half the amount of fat that the creamed style does, yet is similar in texture. Cottage cheese is a popular addition to salads. Cool, jellied summer salads, such as this one recently tested by the home economists, AgriCulture Canada, .are delicious and filling when cottage Cheese is a main ingredient. QUALITY ; Chicken Limier FROZEN,, PIECES CUT PACK RIBBON SALAD Red layer: 2 envelopes unflavored gelatin 31/2 cups tomato juice 2 teaspoons sugar 1 teaspoon salt 1 teaspoon onion juice 1/2 teaspoon Worcestershire sauce 2 tablespoons vinegar White layer; 1 envelope (1 tablespoon) gelatin 1/4 cup cold water 11/2 cups cottage cheese, mashed 1/2 cup mayonnaise 1/4 cup finely diced celery 2 tablespoons finely chopped onion 1/2 teaspoon salt 1.8 teaspoon pepper 1 teaspoon lemon juice To niake red layer, soak gelatin in 1/z cup tomato juice 5 minutes. Combine remaining tomato juice with rest of ingredients and heat to boiling. Add gelatin and stir until dissolved. Pour half of mixture into 8-inch square pan or 0 x 5 inch loaf pan. Chill until set, Leave remaining half at room temperature. To make white layer, soak gelatin in cold water, 5 minutes, then melt over hot water, Combine remaining ingredients, Add gelatin and chill until slightly thickened. Pour over tomato layer, chill until set, Add remaining tomato mixture and chill until firm. Cut in slices or squares, 8 servings.
