of Meat", on June 1 in the Clinton High School at 8:00 p.m,
Home Economists from the Ministry will be demonstrating meat dishes that will serve four and cost

It was due to the dreams and
persuasion of one man that
Hamilton today has a garden
empire on its doorstep.
' The Hon. Thomas Baker
McQuesten was a man who
conceived tranquil grandeur
against an industrial backdrop.
As provincial minister of
highways in the 1930's he gave
Ontario its modern highways
system and many miles of natural
beauty along the Niagara frontier.
As a lawyer in the 1920's, his
contagious enthusiasm flattened
all civic opposition...and the
Hamilton Board of Park
Management bought 1,200 acres
of land, including the scenic
marshland of Cootes Paradise
and adjacent wooded ravine land.
This formed the nucleus of
today's RBG.
The jewel of the Gardens for
most visitors in the Rock Garden
created out of abandoned sand and
gravel pits. After his first visit
one travel writer described it as
"a masterpiece of stone, trees,
water and flowers; a Japanese
print come to life. " He then added
that "a first visit to the Rock
Gardens on a sunny, summer day
is about as easy to forget as
opening night at La Scalar'
This is the place to find such an
unusual specimen as Bald
Cypress—known to many as a
native of Florida swamps. Floral
displays begin in early April with
the winter aconites and last until
the chrysanthemums fade in late
October..
The view of the secluded
amphitheatre—completely
hidden from traffic — can be
enjoyed at leisure during
refreshments at the stone and
cedar Tea House.
In contrast, the Spring Garden,
on a peninsula off Highway 2,
displays formal plantings in full
view of passing motorists. Here
can be found the finest iris
collection in Canada with a
display of some 250,000 blooms
on any' fine day from June 5
through 15.
Irises are followed in July by
the Lily Show—the RBG has
introduced six new hybrid lilies,

Wing rhubarb, fresh from
home gardens or the
supermarket, has a distinctive
flavor that adds variety to any
meal of the day. Really a
vegetable, but usually served as a
fruit, rhubarb is often dubbed
"pie plant" because of its popular
use in pies,
In selecting top quality
rhubarb, food specialists at the
Ontario Food Council, Ministry of
Agriculture and Food suggest that
fresh, small to medium stalks,
still firm and brittle, are best,

asparagus
successfully
The season for fresh Ontario
asparagus is short, generally
lasting about one month from mid-
May to mid-June, say food
specialists at the Ontario Food
Council, Ministry of Agriculture
and Food. Enjoy it fresh while it
lasts and freeze some for later
use,
Select only top quality
asparagus for freezing. For
tenderness, look for fresh firm
stalks with close compact tips
that are deep green or bluish
green, Open tips indicate tough
stalks or stalks held too long after
cutting. Straight, medium to thick
stalks are more tender than thin
angular stalks or stalks with a
large amount of white at the base,
Use asparagus quickly, while
freshness lasts. Prepare stalks
for freezing in the same manner
as for fresh use. Wash it well, and
remove any loose scales. Break
off the woody base (the stalk will
snap where the tender part
begins). Uniform lengths are best
for even blanching and uniform
cooking later. Blanch in boiling
water, 3 minutes for stalks of 1/2
inch or less in diameter, and 4
minutes for larger stalks. Cool
under cold running water, drain,
and freeze immediately in
carefully sealed moisture-proof
packages.
Asparagus is an excellent
frozen vegetable. Thaw and use in
a salad, or place frozen into a
small amount of boiling salted
water and cook covered for 3 to 5
minutes. This is about 1-3 the
time required to cook fresh
asparagus, so care is needed not
to overcook.

select young stems with
immature leaves, Oversized, old
stalks become tough and developa
more acid flavor. Bright ruby-red
color is another key to flavor.
Keep rhubarb cold and humid.
Store in the refrigerator in a
tightly closed plastic bag to
prevent wilting, and use it
quickly.
For rhubarb sauce, cook
covered with sugar and a small
amount of water or red wine for
about 10 minutes, or bake covered
at 350 degrees for 40 minutes.
Peeling the stalks is not
necessary—the peel adds color
and holds pieces together. Serve
as a meat sauce with chicken,.
turkey or pOrk, or as a fruit sauce
for breakfasts and simple
desserts. Layered with ice cream
and strawberries, `rhubarb sauce
makes a delicious parfait. For
heartier appetites, bake rhubarb
in traditional Pies, cobblers, and
crisps,
Hamilton's Royal
In Hamilton, close to the
Western tip of Lake Ontario, lie
2,000 acres of land, the site of the
only Royal Botanical Gardens on
the North and South American
'continents.
The Hamilton Royal Botanical
Gardens (RBG), granted the
prefix "Royal" by decree of King
George V in 1930, was one of the
first important conservation
areas in this part of Ontario.
Today, whether you are a
casual visitor who loves beauty
but does not know an iris from a
delphinium, or a dedicated
gardener or botanist, there is
something for you in the 200 acres
under cultivation,
For the wild-life enthusiast, the
youngster or adult who wants to
escape from civilization, there
are 1800 acres of natural lands,
inland lake and marsh. Here,
along some parts of the 25 miles
of trails through forest, ravines
and meadows, a visitor might
think himself a thousand miles
from city life instead of just three
miles (as the crow flies) from
Hamilton's western entrance.

On the Hamilton side of the
Rock Garden, a side road leads to
the 400-acre Arboretum, the site
from mid-May to mid-June of one
of the finest Mac collections in
North America. Only two
collections are larger—those at
Rochester, NY, and Arnold
Arboretum, Mass, Professional
opinion, however, is that the RBG
collection is the most scenic.
Other special collections at the
Arboretum include flowering
cherries and crabapples,
magnolias, rhododendrons,
azalias and a group of trees with
weeping form,
For rose lovers there is the
Centennial Rose Garden with
5,000 bushes representing some
250 varieties of hybrid tea,
floribunda and grandiflora roses.
Both the rose garden and trial
garden for summer annuals
(where 10,000 plants of 500
different varieties are grown) are
reached from the Gardens'
Headquarters.
This building has become a
focal point for visitors, A special
attraction is the Floral Art Shop
run by the Women's Committee
where popular items for sale are
the dried flower arrangements
(made by members) and
accessories for flower arranging
and preserving.
Other highlights of the Gardens
are:
+ The Children's Garden and
Children's House. During the past
25 years some 1,800 children
have learned the art of gardening
here.
+ The Nature Interpretive
Centre- (near the Arboretum)
where a naturalist is on duty to
help visitors to the marshland
bordering Cootes Paradise.
+ The Hedge Test Garden in
the Arboretum, Here are more
than 116 deciduous and evergreen
hedge varieties planted so that
home and professional gardeners
can see for themselves which
hedge is best for specific
purposes. The nearby Ground
Cover Collection is for use in the
same way.
Major highways of southern
Ontario provide easy access to
the Royal Botanical Gardens.
Visitors from either Toronto or
Niagara Falls can reach the
Gardens by taking the Queen
Elizabeth Way to the Highway 403
intersection at Burlington.
Follow Highway 403 toward
Hamilton, exiting as marked at
Highway 6, Trillium signs direct
visitors to the Rock Garden.
Visitors using Highway 401
should leave it at Highway 6 and
drive south for 18 miles, exiting
for Burlington and Highway 2.
