The three recipes presented by the home economists, Canada Agriculture, Ottawa give different quick ways of utilizing a 19-ounce can of vegetables. The "Zesty Pork Casserole" uses canned cream corn and the "Quick Pickled Beets" can be made with canned whole, sliced or quartered beets. By using canned potatoes and green beans, it's easy to make the "Jiffy' Potato Salad". ZESTY PORK CASSEROLE 2 L/2 cups diced cooked pork 2 cups cooked macaroni (1 cup or 4 ounces uncooked) 1 19-ounce can cream corn 1/2 cup chopped onion 1-3 cup chopped green pepper 2 tablespoons fat 1 /2 cup beef bouillon I/2 cup chili sauce 1 tablespoon vinegar 1 teaspoon salt 1/4 teaspoon pepper 3/2 teaspoon marjoram Buttered bread crumbs Mix pork, macaroni and corn and turn into greased baking dish. Saute onion and green pepper in fat until onion is transparent. Stir in bouillon, chili sauce, vinegar and seasonings and bring to boil, Pour over meat mixture. Cover and bake 25 minutes at 350 F, uncover, top with crumbs and WCWRIA and GREY mayonnaise. Chill. Toss lightly with mayonnaise before serving. McIntosh apples In cold storage This year cold storage units were used to maintain the quality of over one million bushels of Ontario McIntosh apples. After harvest, apples normally continue to ripen and soften. Cold storage units, with a temperature just above the freezing point of apples, will slow down this natural ripening. High humidity in the storage unit prevents drying and shriveling. High quality apples can be stored in this way for about three months after harvest. To maintain quality in home storage, food specialists at the Ontario Food Council, Ontario Department of Agriculture and Food, advise storing apples in perforated plastic bags in the regrigerator crisper. The cool humid crisper best approximates the conditions of the cold storage unit. For larger quantities of apples, a cool (32 to 40 degrees), well-ventilated basement or garage is satisfactory. Apples purchased at this time of year will keep well for about 10 days in home storage. They are an economical buy for casseroles and creamed vegetables dishes. Look for the "Canada" in the grade name. This means the product was grown or packed in Canada. Canned vegetables can be used in a multitude of ways.
