dough dumplings, deep-fried
cherry fritters, puddings or
sauces,
FRESH CHERRY SAUCE
1.1/2 cups pitted sour cherries
1/4 cup water
142 cup sugar
1/8 tsp salt
1 tbsp cornstarch
1/4 tsp mace
1/4 tsp almond flavoring
Crush 1/2 cup of the sour
cherries, add water and simmer
for 5 minutes. Press mixture
through a sieve to make about
112 cup cherry juice.
Mix dry ingredients in
saucepan and blend in cherry
juice. Cook, stirring constantly,
until sauce thickens and
becomes clear.
Add remaining cup of
cherries, cover, and cook slowly
until cherries are tender. Cool
and add almond flavoring. Serve
on ice cream, cake or pudding.
Makes about 1-1/2 cups.

For lovers of this special
berry, the season is never long
enough. That is why the home
economists of the Canada
Department of Agriculture have
selected Some Ways to enjoy
raspberries until the next season
rolls.around.
Raspberries may'be made into
A freezer jam. This type of jam is
extremely easy to make and
requires no cOoking. It should be
stored in freezer containers
rather than glass jars because Of
possible breakage. When stored
in this way it will keep its fresh
berry flavor as long as one year,
However, you may wish to keep
a container or two readily
available for immediate use. If
so, keep them in the refrigerator
and for best flavor use within
three weeks. When you wish to
recapture the raspkerry season
once more thaw some freezer

Another way of extending the
raspberry season is to make up
some "Raspberry Puree". A
blender makes it a simple
process but an electric mixer
may be used. Fruit sugar (very
fine granulated) is recommended
because it dissolves readily. This
ruby red puree has a satisfactory
storage life of up to one year in
the freezer and is delicious when
served with ice cream. For a
"right now" treat you may wish
to use fresh raspberries in a
butter icing for that special
occasion.
Camp life should be a happy
relaxing experience for
everyone, including the cook.
This means the meals should be
hearty, yet simple to prepare.
The home economists of the
Canada Department ' of
Agriculture have a suggestion to
shorten "on the spot" meal
preparation. Select a few
suitable recipes using canned
foods then assemble the
accompanying staple ingredients
before you leave home. Items
needing refrigeration .can be
added at mealtime.
I '•For exainple,. -the "Quick
Frankfurter Paprika" requires
dried minced onion, paprika,
salt, pepper and dill seed.
Measure the seasonings and fold
them inside a small piece of
aluminum foil. Tape it to the
can together with the recipe.
These condiments give the
wieners — canned tomatoes dish,
its unusual flavor, and by
combining seasonings at home
none will be forgotten. This idea
might be tried for other family

4 cups raspberries (about
quart)
% cup fruit sugar
Puree raspberries in blender,
then press through sieve to
remove seeds, Return puree to
blender. Add sugar gradually and
blend until thick (about three
minutes), If using electric mixer
sieve raspberries first, add sugar
and blend. Serve with ice cream.
Makes about two cops.
To freeze pour into freezer
containers leaving 1/2-inch
headspace. May, be frozen for
one year,
RASPBERRY FREEZER JAM
4 cups crushed raspberries
(about 2 quarts)
6 cups sugar
1 6-ounce bottle liquid pectin
Combine raspberries and
sugar. Let stand until sugar is
dissolved (about 20 minutes).
Add pectin and stir constantly
for three minutes. Pour into
freezer containers, cover, and let
stand at room temperature until
set (about 24 hours). Store in
freezer. Makes about seven cups.
RASPBERRY ICING
I/2 cup fresh raspberries
4 cups icing sugar
1 tablespoon melted butter
1/4 teaspoon lemon juice
Crush berries, add sugar and
beat well. Add melted butter
and lemon juice. Beat until
smooth and fluffy. Makes
enough to ice sides and top of
nine-inch tube cake.
