You know, I've been hearing all sorts of wierd reports out of. towns where there are youth centres or drop.in halls or coffee houses about the poor quality of young people who seem , to frequent these places.. In fact, everyone seems to be complaining about the kids and their desire to get off by themselves in some dingy hole to smoke and listen to loud music and talk about whatever it is that young people talk about. I thought some of you might be interested, to know about the youth hostel which is presently operating at the Keller, household. We have a back room. At one stage in history it was a summer kitchen, I believe. It is at the very rear of the house, has no bedrooms above it and boasts its very own entrance. When son number one decided that he would become the world's loudest drummer, my husband and I decided that we would banish our boy to the "back room". We spent a little money on it . . put some panelling on the walls, a tile floor, some paint and some lights . . . and presto, a jamming room. Along with our son's drums, one will find there on almost any given day two or three electric guitars, one or more amplifiers and any number of other assorted instruments. Any evening you will find anywhere from three to 23 young people packed into that back room and having an absolute ball together. Friends wonder how we hack the noise. I admit that at times it gets very nerve-wracking, but for the most part we are holding up well. I guess it is because there is satisfaction in knowing where the kids are, what they are doing and with whom they are spending their evenings. But most of all my husband and I have been getting an education. I think we have grown much more tolerant in th "last 7few weeks'- tliari we ever" haVee ` possible. For instance, we've learned that you dare not judge all young people alike. Their interests are as varied as the spices and their outlooks as different as Bach is from Ringo Starr. We've had all kinds of teens in our "back room". We've had the youngsters who come to sit and to listen. We've had the typeS who drop over, just to join the band. We've had the troublemakers , whose only desire is to arouse the others to some kind — any kind— of reaction. We've had the lovers. We've had the loners:- We've had the - so-called "goody-goodies" and the "greasers". We've had, I think, just about everything imaginable in our -"back room". But I can honestly say there has never been one young person there „who has been so rude or so troublesome that we could „noi, cope: There• have been times when we have had to be firm, hilt there has not been an instance When we really had ,to worry about the goings-on. Why? Basically I think it is because' the kids are .,,,silently grateful for a room in which they can be themselves =without much outside, interference, t think each one understands that, while this room is in our home, it is alsO their own special place where- no one is going to constantly check them up on their habits. For the most part, my husband and I have discovered that if you expect. young people to behave in ^h certain manner, and then leave them „Rippe to work 00 their own special brand of co-operation, you will have .very little trouble. Naturally it is a gruelling hard battle to keep everything. On .an even keel with kids And Adults constantly jiving so far as codes are concerned, But slowly, I believe, we are beginning to have insight into the youthful viewpoint, and I trust, they into our ideals, I don't propose to ever reach perfect rapport with each teenager who .enters our Minced beef for hamburgers has been going to campsites for many years. This poputar meat also combines well with some canned foods to make easy hearty dinners. - It is best to transport minced meat in a cooler while it is in a frozen state. Remember that a two-pound package will stay frozen longer than two one-pound ones. How long it stays that way will depend upon the method of storage, It should be cooked when it has become partially or completely thawed. If it cannot be eaten immediately, cook it then use it the following day. If theree"s more in the package than the recipe requires, a hamburger lunch is always enjoyed. With campers in mind, the home economists of the Canada Department of Agriculture provide two main dishes using minced beef. Each recipe uses dried minced onion in place of fresh, onions and is worth flint with other family favorites. "Campers' Spaghetti" combines cans of spaghetti and tomato sauce, mushrooms and kernel corn with, suitable seasonings."Quick Chili Con Carrie" brings together canned kidney beans and tomato soup to blend tantalizingly with the cooked minced beef, Each of these recipes requires one pan and_ simmering for 15 to 20 minutes. The mouth-watering , aromas will drift through 'the pine branches or along the beach and bring the family running to the outdoor dining room. Although each recipe makes 6 The Glass Container Council of Canada's first test recycling program gets underway in Toronto, Hamilton and Wallaceburg on Thursday, July 2. The three month program which was announced by the Council's president, J.D. Mingay, is aimed at alleviating some .of the nation's growing litter and solid waste problems through the salvage and reuse of packaging materials. Glass container . recycling centres in Toronto, liamifton and .Wallaceburg will buy used no-deposit soft drink bottles at one-half cent' each or $15 a ton for bulk amounts for the three month period ending Oetober 1. In making the announcement, Mr. Mingay said the redeemed containers will initially be ,recycled back into the bottle making process, but that at the same time efforts will he maintained by the industry to tiy to establish other by-product uses for the returned glass. While pointing out that the Canadian glass container industry was the first in the beverage container field to recycle convenience containers, Mingay emphasized that the test "back room". Yes, there's more to minced beef than hamburgers! CAMPERS' SPAGHETTI program was a "first step" and that the Glass Container Council would investigate extending it to other areas after the industry has had an opportunity to assess the effectiveness of the program. Extensive advertising and publicity programs will be conducted in the To ro nto-H am ilton-Wallaceburg areas to encourage familiest, as well as youth, church and civic organizations to collect and deliver no-deposit soft drink bottles for recycling at the three centres. THINK! DON'T SINK! BE WATER WISE! Wear a government , approved LWE- JACKET when water skiing, Have a lookout man In your tow-boat When Shakespeare wrote "niy salad days, when I was green in judgement" he could have been thinking about some form .01 lettuce. The many varieties we know today have evolved from a common- roadside weed found originally in parts of Europe and Asia. Until coMparatively recently lettuce was grown extensively in home gardens. Improved methods of handling and transportation now bring this salad ingredient to our markets in excellent condition. With the arrival of July and "Salad Month" comes the opportunity to enjoy this succulent salad ingredient at its best. The most popular variety of lettuce is iceberg or head lettuce. Choose a round, firm head which "gives" slightly when squeezed gently. The heaviest heads are usually more compact and, consequently, are a better buy. It is a common practice to discard the coarse outer leaves but this waste should be kept to a minimum. The green leaves have more of the precious vitamins than the inside, ones. Leave them attached and pull them off later to line a salad bowl or to tear and toss into a salad. Removing the core before storage makes for easier serving?. later, It is better to twist out the Ore as it will discolor when en t with a knife, To prepare lettuce for storing, bold the head, cored-end up, under a good stream of cold renniog water then place the 3 insed lettuce head, cored-end down, on a. rack and allow to drain .thoroughly, .Store in .a covered plastic container or plastic bag with enclosure tag, excluding as much air as. possible. The container must allow the lettuce to drain well, If a plastic bag is used it should have some paper towelling in the bottom to take up the excess moisture, According to the home economists of the Canada Department of Agriculture, if these directions are followed the lettuce will remain crackle-crisp for one to two weeks, Of course the lettuce must be in top condition when stored. The tender leaves ' will separate readily into lettuce cups to frame salads or the whole head may be cut for individual green salads. It may be sliced through the center into four" or more wedge-shaped. pieces, or the opposite way into inch-thick "wheels". These make attractive simple salads when topped with a. favorite dressing.
