For a festive dessert during the holiday that makes pie lovers forget the usual mince kind, serve Spicy Squash Pie with Fluffy Whipped Topping. CHRISTMAS MENU FOR WEIGHT WATCHERS: Tomato Cocktail Refresher, Tangy Herbed Mushroom Caps, Puree Alsatienne, Golden Roast Holiday Turkey, California Stuffing, Crisp Vegetable Relish Tray, Saucy Green Beans, Fluffy Whipped Turnips, Broiled Tomato Halves, Strawberry- Orange Delight. TOMATO COCKTAIL REFRESHER for weight watchers 2/3 cup tomato juice Small piece celery 1 parsley sprig and seasoning mix OR chicken bouillon cube, crumbled 1 thin slice lemon, with rind Salt and grated onion to taste Dash of artificial sweetener (optional) 2 ice cubes If using blender which can handle ice ' cubes, combine ingredients in blender container. If necessary, crack ice before using. Blend until frothy and pour into chilled champagne glasses. Makes 2 servings. TANGY HERBED MUSHROOM CAPS for weight watchers 16 medium mushrooms 1/2 cup fresh chopped parsley , 1 can (4 oz.) mushrooms, stems and pieces, chopped fine 1 tablespoon dehydrated onion flakes 1/4 teaspoon thyme 2 packets instant chicken broth and seasoning mix OR 2 chicken bouillon cubes, crumbled Freshly ground pepper 1/4 curt water Remove stems trom mushrooms. Cover caps with water; bring to a boil and boil until caps are semi-soft. .Finely chop stems and add to remaining' ingredients. Heat in non-stick skillet until mixture is tender. Remove from heat and stuff into caps. Place on baking sheet and bake at 375 degrees F. for about 20 minutes, Makes 4 servings. PUREE ALSATIENNE for weight watchers 1 can (141/2 oz,) cut asparagus 1 cup tomato juice 1 cup water 3 packets instant beef broth and seasoning mix OR 3 beef bouillon cubes, crumbled 1/4 teaspoon celery salt % teaspoon Onion powder Freshly ground pepper to taste Empty asparagus and liquid into blender and blend until smooth. Pour into sauce pan. Add remaining ingredients and simmer 20 minutes. Makes 4 servings. GOLDEN ROAST HOLIDAY TURKEY for weight watchers Roast the turkey uncovered at 300 degrees F. until tender, allowing 25 minutes a pound under 12 pounds; 20 minutes a pound for larger turkey. Baste it about every half hour With diced unlimited vegetables (e.g. diced celery, green peppers and mushrooms) cooked until tender in chicken bouillon and other seasonings to taste. CALIFORNIA STUFFING for weight watchers 1 package (10 oz.) frozen chopped broccoli 1 package (10 oz.) frozen cauliflower 1/2 cup finely chopped celery 1/4 fresh green pepper, finely,,, chopped 4 teaspoons dehydrated onion flakes 2 medium apples, peeled, cored, and diced 1/2 cup water 1 teaspoon poultry seasoning Cook broccoli and cauliflower according to package directions, allowing an additional 2-3 minutes cooking time. Drain and place in mixing bowl. Add remaining ingredients and mix well with an electric or hand mixer. Turn into a 9 x 9 x 2 inch baking dish and bake at 350 degrees F. for 30 minutes. Makes 4 servings. SAUCY GREEN BEANS for weight watchers 2 packages (10 oz, each) frozen French style green beans 1/2 fresh green pepper, finely diced 2 teaspoons dehydrated ' onion flakes 1/2 teaspoon garlic powder 1 packet instant beef broth and seasoning mix. OR 1 beef bouillon cube, crumbled 1 packet instant chicken broth Cook beans according to package directions. Remove from heat, Do not drain. Add remaining ingredients and mix. Remove 1 cup of beans and liquid and place in blender and blend— until smooth., Pour over beans; combine, heat and serve. Makes 4 servings. FLUFFY WHIPPED TURNIPS for weight watchers 1 pound yellow turnips, peeled and diced 1/4 teaspoon imitation butter flavor Salt and white pepper to taste Cover turnips with water. Bring to a boil and cook .until tender, 10-15 minutes, Drain. Add remaining ingredients and whip until light and fluffy. Makes 4 servings. STRAWBERRY-ORANGE DELIGHT for weight watchers 1/4 cup orange juice 1 cup frozen strawberries Artificial sweetener to equal 2 teaspoons sugar Combine all ingredients in blender and blend until smooth, Pour into freezer tray and freeze until firm. Makes 2 servings. SPICY SQUASH PIE WITH FLUFFY WHIPPED TOPPING for weight watchers 2 packages (10 oz. each) frozen summer squash 2 envelopes (2 tablespoons) unflavored gelatin 1/4 cup cold water 1/4 cup boiling water 1/2 teaspoon pumpkin pie spice 1/3 cup instant non-fat dry milk powder %teaspoon vanilla Artificial sweetener to equal 10 teaspoons sugar (or to taste) Topping (see below) Cook squash according to package• directions. Pour cold water into blender and sprinkle gelatin over it to soften. Add hot water and blend. Add squash and remaining ingredients to blender and blend until smooth. Pour into individual foil tart pans (or custard cups) and place in a shallow baking dish. Add hot water to about 1/2 inch depth and bake at 350 degrees F. for 30 minutes or until firm. Pie may be served warm or chilled. Serve with topping. Makes 4. servings. TOPPING: 1,/2 cup chilled evaporated skimmed milk 1/4 teaspoon vanilla Artificial sweetener to equal 8 teaspoons sugar (optional) 1/4 teaspoon lemon juice • Combine all ingredients into chilled mixing bowl. Whip until stiff peaks are formed. Serve at once. Makes .4 servings. t• Leftover turkey freezes well Leftover cooked turkey should be used within 2 to 3 days, but if properly packed and frozen, it can be stored 1 to 2 months. In this way, leftovers which add monotony to holiday meals can add variety in January. Cool leftover turkey as -quickly as possible after dinner, advise food specialists at the Ontario Food Council, Ontario Department of Agriculture and Food. This applies whether leftovers are to be frozen immediately or refrigerated for use next day. Remove bones and excess fat. Keep meat in large slices as they retain moisture better than small slivers of meat when frozen. Freeze leftover dressing separately. Seal in freezer bags or heavy foil, excluding as much air as possible. Thaw the leftovers for sandwiches, salads, or casseroles. If, time permits during Christmas, the leftovers can be made into casseroles for freezing. Thicken casseroles for freezing with egg yolk or use condensed cream soup as a base, as sauces thickened with flour or cornstarch will separate when thawed. For this reason, gravy does not freeze well. This is a time of intense activity: of the making of things, of the buying of things, of the selling of things, of the wrapping of things, of giving out and gathering in, of decorating and adorning, of crowding much into a limited length of life toward a definite date and deadline. Christmas, of course, has its several sidea-i its spiritual side, its commercial side, and its personal side that pertains to the being together of family and friends. It also has its compassionate side, the blessed side that moves us to reach out for others who might otherwise be left lonely and alone. And we shouldn't let the rush of it rob us of its real significance. We shouldn't be "...sawing so fast thal we forget to sharpen the saw," or living so fast that we mistake the motions and mechanics for the real essentials of the season. It isn't the mere motions and mechanics that make 'Christmas. Whether we know it or not, whether we ignore it, or not, whether we rush blindly past it or not, it is the deeper meaning of it that moves us: the spirit of Christmas and of the Christ; and the binding power that gives it sweet assurance of the everlastingness of families and friends, and the great and good gift of being together-so good that it is blessed to be assured of it, always and forever, Let not the rush_of it lose for us its real reasons, or cause us to close our eyes to the love of lov'ed ones, to the loneliness of others, to the great goodness of the giving of ourselves, Oct to the great goodness of being together, and belonging, all of us, as children of a Loving Father who sent His Son that•we might have life everlasting. Let not the rush of Christmas crowd out the very things that Christmas is.
