Ontario's 1971 winter wheat
acreage has been reduced by an
estimated 10% because of winter
and spring weather damage.
Mr. K. A, Standing,
Cap ital grants
program
annoan eed
The capital grants program
recently announced by the
Ontario Department of
Agriculture and Food includes
grants for farm vacation hosting,
The purpose of the program is
"to assist prospective farm
vacation hosts to make necessary
capital improvement in their
facilities to enable them to
engage in hosting farm
vacationers,"
K. E. Best, agricultural
representative for Haldimand
County, says the grants are for
remodelling the farm home, and
do not apply to additions to a
house or a building detached
from the main farmhouse. The
grant consists of 4Q per cent of
the cost of improvements, up to
a maximum of $1,500.
Eligibility requirements for
the grant are: a demonstrated
need to improve family income;
present facilities inadequate to
host vacationers; and a family
commitment to the program,
The husband-wife team must
attend a training course and be
considered capable of hosting
vacationers. The facilities must
be listed in the Farm Vacation
Guide and the hosting program
promoted.
Additional requirements are
that the applicant must own the
property; the annual income
from the farm operation must
exceed $3,000; and finally, the
family must keep accurate
records on costs and income
from the venture.
Prior approval must be
obtained before any work is
started, Application for grants
and additional information may
be obtained from county or
district agricultural offices.

for harvest, The government did
not conduct its usual May survey
this year.
Last year, according to •
government eatimates, the total
acreage harvested was 30,000
Which averaged 43.9 bushels per
acre for a total production •
volume of 16,684,500 bushels.
The board official said that
on the basis of the last 10 year
average yield of 39.6 bushels per
acre, production would total
about 14,6 million bushels this!
year. However, if last yearsi
yields were repeated, production!
could total over 16 million!
bushels.
Average production for the
past 10 year period was 15,9
million bushels.
Mr. Standing said in additionl
to the weather damage reports,
there have been reports of wheat
yellowing in the last two or
three weeks. The condition is
caused by mosaic virus which
causes yellowing of the lower
leaves of the plants and results
from cool weather and rapid
growth.
With improved growing"
conditions the disease normally
disappears.

Hoard reteased results of board
surveys which indicate a wide
variance in damage.
He said reports range from nit
to 50 per cent and it would
appear the hardest hit areas were
in Lambton, Norfolk and Huron
which experienced about 14 per
cent, 20 per cent and 13' per
cent damage respectively.
The two most southerly and
largest producing counties, Essex
and Kent experienced about
seven per cent and eight per cent
damage respectively,
Mr. Standing said damage was
caused by several factors which
included some of the usual
winterkill caused by smothering
effects of either snow, ice or
water, drying winds and snow
mold caused by prolonged snow
cover.
In projecting what the
damage means in terms of acres,
Mr. Standing said that based on
the Ontario Department of
Agriculture and Food official
estimate of seeded acreage last
fall of 375,000 acres for the
province, it could be assumed
that about 370,000 acres remain

Eggs are such a good buy
right now you can't afford to
over-look them. Eggs can be
frozen• at zero degrees and stored
for up to four months. Frozen
eggs can be used in cakes,
cookies, muffins, meat loaf or
sauces, suggest food specialists at
the Ontario Food Council,
Ontario Department of
Agriculture and Food. They can
even be scrambled or served as
an omelet.
Eggs may be frozen whole or
separated. To prepare whole eggs
for freezing, break them out of
the shell and mix the yolk and
white thoroughly with one half
tsp. salt or one half tsp. sugar for
each cup of eggs (about six
eggs). The sugar or salt is
required to prevent separation of
egg yolks during freezi% Salt, is
used for eggs tolieused in train
course dishes, and sugar for eggs
adjacent to the base and is the

to be used in desserts. Egg yolks
only are mixed with one quarter
tsp. salt or one tsp. sugar for
each one quarter cup egg yolks.
The egg whites alone require no
mixing, salt or sugar for freezing;
just put them into a container
and freeze;
Ice cube trays are ideal for
freezing eggs, since each square
will hold one or two eggs,
depending on the size of the
tray. When solidly frozen the
eggs can be popped out and
stored in a plastic bag. When you
are ready to use them, it is easy
to remove exactly'the number of
eggs required.
Standard freezing containers
or plastic cartons also may be
used. Package the eggs in small
quantities for specific purposes,
for example, six eggs for
tiVelve egg whites for
