Paradise at Horne
With unisex on the upswing, it is surprising that men still seem to
prefer the feminine woman, but they sure do!
The old cliche that the way to a man's heart is through his stomach,
still stands true. Today even the career girl can work her feminine
charms in the kitchen, It's easy to impress that "someone" with a
Paradise Cake — your baker does most of the work.
On the way home buy one round chiffon cake or angel cake, While
your marinated rump roast or your stuffed flank steak is cooking, make
your frosting and ice the chiffon cake. To achieve the Paradise look
gently press shredded cocoanut into the soft frosting and garnish with
peach slices. For added effect, colour your frosting.
Although many try to deny it, feminity is still an important attribute
of a woman, Remember in Canada you and your baker can perform
miracles.
Peach
1/2 pint heavy cream
3 tablespoons icing sugar
1/4 teaspoon vanilla
1 large baker's chiffon cake
1 (28 oz.) can sliced peaches,
drained
1 cup toasted, shredded cocoanut
Whip cream and fold in sugar and
vanilla. Cut cake in half, horizontal-
ly. Cube 34 cup of the sliced
peaches. Spread some whipped
cream and the cubed peaches
evenly between the cake layers.
Spread the remainder of the cream
over top and sides of the cake.
Arrange sliced peaches in a swirl
pattern on the cake top. Sprinkle
toasted cocoanut around sides of
the dessert. Refrigerate before
serving.
Yield: 12 to 16 servings.
Paradise Dessert
Only from mid-May to
mid-June can we enjoy that
highly seasonal, tender green
vegetable delicacy, fresh Ontario
asparagus.
To choose fresh quality
asparagus, look for straight green
stalks. The tiny buds at the tip
of each stalk should be dark
green or bluish green and tightly
closed, Generally thick stalks are
more tender than very thin
spindly ones which are apt to be
tough and stringy,
Asparagus may be purchased
by the pound or by the bunch.
Check the weight of the package
when comparing prices, say food
specialists at the Ontario Food
Council, Ontario Department of
Agriculture and Food, Each
pound will give four servings,
For maximum flavor, it is best
to serve asparagus as soon as
possible after cutting or on the
day of purchase. If it must be
stored; break the stalks just
below the green part (they will
snap where the tender tip ends
and the tough stalk begins),
wash, and dry well. Then store
in a plastic bag or covered
container in the refrigerator.
To cook the asparagus, snap
the stalks, wash, then tie in loose
bundles. Stand the asparagus
upright in a deep saucepan so
the stalks cook in boiling salted
water and the tips in the steam.
To keep the bright green color,
cook in an uncovered pan for
the first one to two minutes,
then cover. Cook about 15
minutes until just tender — no
longer, Remove stalks carefully
to prevent breaking the tips,
Asparagus is as versatile as it is
delicious, Try it with a
hollandaise sauce, butter, lemon
juice, or vinaigrette; or on toast
topped with crisp crumbled
bacon and a creamy egg sauce;
or rolled in barn and topped
with a cheese sauce,

Mother's Day is just past and
many mothers in Clinton got a
Mother's Day present they might
have just as peon done without.
Pupils of the morning and
afternoon kindergarten classes at
Clinton Public School told it all
when they were asked two
questions by their teacher: What
does your Mom look like? Why
do you like your Mom?
The answers were net always
as complimentary to the
mothers as the children perhaps
thought. Here are the results,
and we hope the mothers will
them in the spirit they were
intended.
