Bring to a boil and simmer, without stirring, for 10 minutes. Re- move the pan from heat and stir do the juice and the rind. Add a few drops of the desired food colouring. Pour mixture into a square pan which has been rinsed with cold water. Chill overnight. Cut into squares and roll in eciaig sugar.
