April brings with it so many
harbingers of spring, we scarcely
know' which to begin. using first,
should it be the fashionably pink
stalks of rhubarb, or the verdantly
green vegetables that have been
forced to come along but are still
a welcome change after the root
vegetables of winter? Perhaps it
should he the phimp pineapples,
with their distinctively sweet an-
oma and flavor all neatly locked
inside them before they begin the
long trek up from the sunny south
or the surf-swept islands,
The Dairy Foods Service Bur-
eau suggests that there's yet an-
other "spring" food, maple syrup,
that often Misses out on the April
recognition accorded to its fellow
food °firsts." Maybe this happens
because maple syrup is with us the
year round. This spring though,
we could do something about the
running Sap, and its resulting
sweet syrup.
Of course we're all familiar with
the umpteen good reasons for us-
ing maple syrup "as is" : , • on
French toast, waffles, pancakes,
cornmeal squares and hot. biscuits,
However, in combination with
milk, the dairy food that's a fluid
food, there are some spectacular
desserts in store for you, Maple
Cream Pie, Maple Charlotte Busse
or Maple Ice Cream . .. take your
choice, or take all three of them
in turn. They all begin with the
two M's, milk and maple syrup
and none have added sugar be-
cause the syrup sweetens the
whole. Besides, they're all easy
enough to prepare so you won't
consider them just "company
fare." A fine way too, Mother, to
get extra milk into meals for your-
self, since statistics tell us that
unfortunately it's the homemaker
group that skimps on milk even
though mothers go about making
sure their youngsters get their
quota.
And as for the syrup of spring
. maple by name . . even as we
print this, we're filling in between
the lines with our own vivid mem-
ories of sugaring off. For once we
went out as a volunteer, glad of a
day's outing away from our desk
and printers' ink. We worked
hard, as novices do, emptying the
sap buckets that hung from all
the trees the farmer had tapped;
and we basked in the warmth of
that March day, knowing full well
that warm days and crisp nights
are a must to make the sap run.
What we. learned with astonish-
ment though was, that although
we spent hours collecting sap, and
brought in gallons 'n gallons of it
to show for our efforts, it takes a
great deal of sap to make just a
little of the precious syrup, as it's
boiled and boiled and then boiled
again.
Now the poet said "Make me
over, mother April, when the Sati , begins to stir" , but if it's Meals
you want to .mako aver, go right ,
ahead with these dessert ideas.
Not only has the sap begun to •
atir, but enough of wiles run to
make fresh wonderful crop, of
maple syrup for this spring '59,
In combination with milk, we
think you'll find these maple dish-
es marvellous,
AlaPle Charlotte Bosses
(Makes 6 servings)
2 teaspons unflavored gelatin
11 cup cold milk
2 egg yolks
dash of salt
34 cup maple syrup
1 cup milk, scalded
2 egg whites
2 tablespoons sugar
finger of cake or lady fingers
maple syrup
Soften gelatin in cold milk, Beat
egg yolks slightly, add salt and
maple syrup. Slowly add scalded
milk to egg mixture. Cook in
double boiler until mixture coats
spoon. Add gelatin and ,stir until
dissolved. Remove from heat;
cool until partially thickened. Beat
egg whites until stiff; add 2 table-
spoon sugar. Fold egg whites in-
to gelatin mixture. Line mold
with fingers of cake dipped in
maple syrup, Pour in egg and gel-
atin mixture. Chill until set. Un-
mold, serve with whipped cream
and garnish with nuts, if desired.
maple Cream Pie
(Makes 1 pie)
1 (9 inch) baked pastry shell
1 tablespoon unflavored gelatin
14 cup cold water
11/s cups cold milk
1 cup maple syrup
1 package quick-setting vanilla
pudding
14 cup finely chopped walnuts
1/2 cup whipping cream
Soften gelatin in cold water for 5
minutes; dissolve over hot water.
Combine milk and syrup in deep
bowl; add pudding powder, beat
for 1 minute with rotary beater.
Stir in gelatin, Beat cream until
stiff, and fold into pudding until
well blended, Pour into pastry
shell and refrigerate until set.
Sprinkle chopped, walnuts on top.
Maple Ice Cream
(Makes 6 Servings)
1 teaspoon unflavored gelatin
14 cup cold milk
% cup milk, scalded
6 teaspoons maple syrup
2 teaspoons flour
dash of salt
2 egg yolks, slightly beaten
2 egg whites, stiffly beaten
1 cup whipping cream
few drops maple flavoring
Soften gelatin in 14 cup cold milk
for 5 minutes. Add to scalded
milk and stir until dissolved. Com-
bine maple syrup, flour and salt;
add to milk and stir until thick-
ened, about 15,arninutes. Then
cover and cook over low heat for
10 minutes. Add some of hot
milk to egg yolks, return to double
boiler ' and cook for 1 minute.
Strain, then put in freezing tray
until ice crystals form on bottom
and round sides. Beat well. Beat
cream until stiff. Fold egg whites
and cream into first mixture. Add
maple flavoring, Return to freez-
ing compartment. When nearly
frozen, turn into bowl and beat
well. Return to freezing compart-
ment and freeze. If desired, 1
cup nut meats may be stirred into
ice cream before final freezing.
