Mild Milk weec
(by Steve Cooke]
The , common milkweed is well known to
most people on the North American continent.
Children readily recognize it by the white
milky sap that, is extruded from the. stein when
cut or broken. It is the white sap which
everyone .knows about. l'ip sure you've all
heard how the sap, when smeared on warts,
will magically make them disappear, and-how
the sap, when dried can be used as chewing
gum. While both these 'notions are firmly
engrained in the folklore of our country, 1
would personally hesitate to 'rely, on the wart
are as a sure fire thing, and I can certainly
think of things I would much sooner chew than
the dried sap.- '
The milkweed does, however, its
'abundance, provide me with several dishes of
which'[ am quite fond. Another plus is the fact
that milkweed can be harvested from early
, spring until late summer.
In the early spring, the young shoots are yet
another substitute for asparagus. Pick the
shoots before they start to uncurl and remove
the fuzz with a light rubbing action. To cook,
simply boil for two or threeitinutes to remove
the milky latex, then drain and simmer ,in,
fresh water until tender. If you find the taste
too sharp for your liking, try a few additional
changes of.water in the cooking process. We
prefer to serve the.shots lightly buttered and
covered with a cheese sauce.
The flower heads, when they are still in the
bud stage. are our stibstitute for brocebli.
They are bect nicked when still a grey-green
shade, before any colcnit starts to appear. The
initial colour is not very Appetizing, but after
the first quick boiling (3.4 min.) the buds take
on a lovely bright green colour. Only one
change of water is required and a total cooking
time of approximately 8 minutes, gives you a
very tasty cooked vegetable. Serye this one up.
with just it touch of salt and' butter.
My favoprite frorn the milkweed plant and
the easiest to recognize ,is the, yoong seed,
pods. The young pods are just starting to form
now, so the next 2 or 3 weeks should give you
some delightful .eating. Pick the pods when
they are still young and 'fairly small If they
feel elastic .to the touch, they may be a bit too
ripe and tend to be a bit fibrous for the
average palate. If this is the case, try to find a
patch that is not so well, developed.
Boil the pods in several changes of water to
which a, little soda has been added. The soda
will-help to break down any of the tdugh fibers
which may be present. We enjoy the pods in
several ways. They are quite delicious just
served up boiled with butter on top; are
fantastic when stewed :Alp with onion and
canned tomatoes and served with, fish, or
frozen, and used as a welcome addition to
stews throughout the year.
If you've never tried a wild food before, take
a basket along on your Sunday drive this
week. It will only take a few minutes to gather
up, a family sized portion if the pods are
ready, and it may just become one of your
favourite delicacies as well.

Both the St. Columban "A"
and "B" soccer teams carne up
flat on Sunday and as a result
were defeated by teams they
should have handled easily.
In the first 'game of the
afternoon the "B" team was
defeated 3-0 by Stratford
Juventus in a very rough and
chippy •game. The referee failed
-to keep the players under control
and as a result 4 players ended up
being ejected from the game.
Later in the day London
Calabrfa downed the '"A" team
by a'3-1 score. This was perhaps
St. Columban's worst game of the
year as they seemed to take the
opposition for granted..
The players finally woke up
after being down 3-0 and
suddenly came to life. Rick 'Ryan
scored for St. Columban within a
minute of London's third goal.
Gord Dick seemingly pulled St.
Columban to within 1 goal two
minutes later but the goal was
disallowed, the referee claiming a
London player had been" fouled
before the goal .was scored. From
this point on the play levelled off
again with neither side having
clear advantage for the remaining
20 minutes.
Both St. Columban teams play
away from home this weekend:
the "A" team 'against • London*
White Eagles and the "B" team
vs. London Serbia.
