After makiuq the syrup,let it get nearly cool, and then stir into it the beaten (not frothed) white of an egg, mixed with the shell. - Use a spoon beater to stir with. Heat very slowly to the boiling point. ',,Do not stir again, but cook slowly ten minuies. Remove the scum us it rises,and strain, A crystal-clear sj'rnp for preserves is also made by ad:ling a quart of sugar to a pint of cold \3ater. Stir until dissolved, then put 'over a moderate heat. Take half Owe white of an egg and beat it, and stir n it into the syrup before it gets hot. !Cook until the syrup bubbles up in the kettle,theu sit where it is cool, and ls dd a teaspoonful of cold water. Retdrn to the fire. Repeat this three times, and when the. third and last tablespoonful of water is added, sit .the kettle where the syrup will settle.
