In these days ,when rigid economy
and an understanditng of the work is
necessary to insure success in agricul•
ture, it is not surpeistng that so many

from farming. .Every neighborhood,
whether good or ••bad, has a few far-
mers who are alwaes in debt, always
struggling to lnee their obligations
when due, and usable to make ueca-
sary improvements. In fact, their
lives are made miserable by what they
seem to think is misfortune. But
is the trouble a rhisfortune or mis-
management ? It

We all know of numerous instances
where farmers, often laboring under a
disadvantage, laavit succeeded in rais-
ing and educating?large families, be-

Many failures that we see cannot be
attributed to lack of industry, as many

Peach preserves are improved by the
addition of a nutnlier of the kernels

Blanch the i
almonds are blanched. Cootc them as
as long as you do the fruit; add a few
to each jar. As vary clear looking
choice syrup is desired for preserves, it
may be clarified wittfi the white of an
egg. After makiuq the syrup,let it get
nearly cool, and then stir into it the
beaten (not frothed) white of an egg,
mixed with the shell. - Use a spoon
beater to stir with. Heat very slowly
to the boiling point. ',,Do not stir again,
but cook slowly ten minuies. Remove
the scum us it rises,and strain,
A crystal-clear sj'rnp for preserves
is also made by ad:ling a quart of sugar
to a pint of cold \3ater. Stir until
dissolved, then put 'over a moderate
heat. Take half Owe white of an egg
and beat it, and stir n it into the syrup
before it gets hot. !Cook until the
syrup bubbles up in the kettle,theu sit
where it is cool, and ls dd a teaspoonful
of cold water. Retdrn to the fire.
Repeat this three times, and when the.
third and last tablespoonful of water
is added, sit .the kettle where the syrup
will settle. Skim off, any scum that
rises to the surface, afid strain through
a napkin.
