cats three months of age and over. Owners Who require cert-
ificates of vaccination for export .or other purposes should

MILK AND EGGS IN LIGHT,
AIRY DESSERTS
Most people enjoy a tall
glass of chilled milk. The child-
ren are usually insatiable, as
far as Milk goes. This is as- it
should be, because milk supplies
_excellent protein for building
strong bodies, and the calcium
assists in developing sound teeth
and bones. Milk contains the pro-
tein, vitamins and minerals, that
mature adults need for mainten-
ance and good general health.
Various types of milk are
available to suit all preferences.
The sale, inspection and legis-
lation of fresh fluid milk is
under the jurisdiction of the
province or municipality. All
milk must be pasteurized and
most of it is sold as homo-
genized. Whole milk Contains
about 3.5% butterfat, and ,par-
tially skimmed milk may contain
1 or 2% butterfat. Skim milk
has all the valuable nutrients
of whole milk except fat arid
vitamin A. Although the vitamin
A is removed with the butter-
fat, many other foods supply
this vitamin.
CHOCOLATE SPONGE
1 envelope unflavored gelatin
2 cups milk.
1/2 cup sugar
1/4 teaspoon salt
4 beaten egg yolks
1 6-ounce package semi-sweet
chocolate piecek
1 teaspoon vanilla
4 egg whites
1/4 cup sugar
Sprinkle gelatin over milk and
let stand to soften. Add 1 /2.cup
sugar, salt and egg yolks and
chocolate pieces. Stir and cook
until gelatin is dissol_yed, choco-
late is melted and 'mixture is
slightly thick (about 8 minutes).
Remove from heat and beat to
blend in chocolate. Stir in van-
illa. Chill until slightly thick,
stirring occasionally. Beat egg
whites until soft peaks form.
Gradually add 1/4 cup sugar and
continue beating until stiff peaks
form Fold egg whites into choco-:
late mixture. Turn into dish and
chill until firm.. 6 servings.

noon.
Each school is allowed
to enter a twenty man team
in the competition. Entries
from the three elementary
schools in Goderich, three
in Clinton, two in Seaforth
and one in Holmesville are
expected for this year's
event.
The individual winners,
a boy and a girl, will each
receive, bikes donated by.
Goderich businessmen. The
winning team will receive
a trophy as well as be
honoured 'at a special ban-
quet following the Rodeo.

Police, was in Seaforth
Thursday mItning to help
select the team to re-
present Seaforth Public
School. This year's event
marks the third time that
Constable 'Fortner has
organized 'the Rodeo for
'the Goderich Lions since
he conceived the idea three
years ago. It started out
as a competition between
the schools in Goderich
only but has mushroomed
to a county-wide event
which gets larger annually.
Mr. Fortner stressed
that the main idea behind
the Bicycle Rodeo was to
develop a high degree of
competence and safety
among the young people who
use our roads and highways
for bicycling.
He added that he was
very impressed with the
ability he found in Seaforth.
',This group has an excel-
lent chance to win,
especially for a first-year
team," he said.
