Beef pot roasts make excellent and economical family dinners and are advertised as
specials" periodically. The cuts suitable for pot roasting are cross rib, short rib, chuck,
blade, rump or round. These roasts, require long, slow cooking in moisture at a simmering
temperature. They may be cooked in a covered container on top of the stove or in the oven.
If desired vegetables may be added during the last 30 minutes of cooking.

1971 Census & Enumeration
The. Huron-Perth Regional Assessment Department will
be commencing its annual census and enumeration' pro-
gramme in the City of Stratford, Town of St. Marys on
April 19th, in the municipalities in Perth County on April
21st and in' the municipalities in Huron County on April
28th. It is expected that it will take approximately three
weeks to complete the necessary calls.
The information required is basically the same as that
required last year, and is necessary for the completion of
the assessment roll for each municipality.
All enumerators involved in this programme carry iden-
tification cards, so please do not hesitate to ask to see
these before answering questions or divulging any infor-
mation.

'SWEET AND SOUR
POT ROAST
*3 1/2 to 4 pounds beef pot roast
2 tablespoons fat'
1 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon thyme
1. -cup chopped onion
1/2 cup 'beef bouillon
1/3 cup ho'ney
1 tablespoon cornstarch
1/4 cup water
Brown 'meat on all. sides in
hot fat. Sprinkle with salt, pepper
and thyme. Add onion to fat and
saute until - transparent.' Add
bouillon and vinegar,. cover and
simmer until almost tendei
(about 2 hours). Add honey and
continue cooking, basting occas-
ionally until tender (15. to 20
Minutes). Remove meat to serv-
ing dish. Combine cornstarch
and water. Add to gravy in pan
and stir until clear and thick.
Pour gravy over meat. 6 ser-
vings.

in their food budget sometime this

When buying maple syrup the
consumer should look for the
produce marked. 100% Pure
Maple. At the present time
maple products do not need to
be graded except in the province
of Quebec. It is usually graded
by the producer. It is sold by
the gallonr• (13 pounds 2 ounces),
but the popular size is the 26-
ounce (net weight) can. Once It
has been opened it should be
stored In the refrigerator,tightly
covered.
Many households use maple
syrup along with pancakes, toast
or breads, but. its special flavor
belongs equally well in desserts.
To enjoy pure maple syrup this
season the home economists of
Canada Agribulture suggest using
it to flavor a, plain white cake,
with or without .a maple syrup
icing. To use in a cake, just
substitute 1. 1/4 cups maple syrup
for 1 cup of sugar and reduce the
liquid by one-half. To make a
"Maple Fudge Icing place 1 ig
cups maple syrup and 3 table-
spoons, butter in a saucepan and
boil to 234 degrees F .or until
,syrup just holds together when
dropped-into cold water. Remove
t from heat and let cool to luke-
warm. Beat_until mixture begins
to lose its gloss. Immediately
pour-an-cake and-spread_evenlY _

enough icing to cover top of a..

5 1/2, used to be a good baby -

He does things like play

we ask him about it. He even

sidered the poor. relatives of the
more expensive roast. Each of
these types of roasts is full of
rich flavor, but requires a
different cooking method to pro 7
duce a. tender result.4 So, knowing
how to prepare a pot roast Attrac-
tively means a gratifying ex-
perience to the homemaker and
an enjoyable meal for the family.
Because thenriscie fibers in
these cuts are somewhat coarser
than , the more expensive 'cuts
which come from the centre of the
carcass, they require special
care in cooking. The secret of
cooking these meaty cuts is
threefold: long cooking, low
temperatur e and the presence of
moisture. If the liquid is an
^acid such as tomato or leinon
juice or vinegar, it will assist
. in tenderizing as well as con-
tribute' to the flavor. The Cow
sumer' can be a winner in two
ways when she cooks pot roasts:
the long, slow cooking provides
minimum shrinkage, and conse-
quently 'stretches the meat dollar.
For a pot roast with'a "dif-
ference" the home, economists
offer. this recipe 'for Sweet and
Sour Pot Roast". If a pressure
'cooker is used, cook for the full
time .as directed .for• a pot roast
of the same size. After the honey
is added, replace the lid and
adjust heat 'so the roast simmers
for the time stated below..
