Generously stuffed devilled eggs make a colorful picture
when accompanied .by slices of ham rolled around cooked
asparagus spears. This delicious combination has acheese
sauce poured over and is then heated through in the oven.
The home economists of Canada Department of Agriculture
recommend this hearty and nourishing dish to serve family
or friends.
Eggs are such a good buy
these days that the budget - con-
scious shopper will want to use
them often. Highly nourishing,
these "golden nuggets" supply
top quality protein, They are
also an important source of iron
and several vitamins. Even if it
takes a dozen eggs to make a
main course for your family you
will be feeding them very econ-
omically indeed. Compared to
some meats there is no waste - '
'other than the shells! So, why'
not put an extra carton of eggs
in your shopping cart this week.
One of the most popular
ways of serving eggs is hard-cook-
ed, If they area cooked at a sim-
mering temp 'nature they are con-
sidered easy to digest. You can
match May sunshine with main
dishes which show off the golden
yoks. With this in mind home
economists have provided several
recipes featuring hard-cooked
eggs for delectable main course
eating, In most cases, two eggs
with other nourishing proteins .
such as cheese or meat are count-
ed as a serving. "Scotch gggs"
are hard-cooked eggs wrapped in
a savory sausage meat 'blanket'.
then rolled and dipped in crumbs
and beaten egg. After baking
they are cut in halves lengthwise.
Served hot or cold with chili
sauce they decorate the dinner
plate of vegetables, Scotch eggs
may be served for a luncheon
dish with a salad, or as a sub-
stantial snack at a late evening
party. The other three recipes
supplied by the Canada Depart-
ment of Agriculture star„ devil-
led eggs with various seasonings
and hot sauces. Stuff them'gen-
erously, even to "over-stuffing”.
-"Stuffed Eggs en Casserole" weds
the flavors of mushrooms and
cheese to eggs amidst a bed of
green peas.
In the "Stiffed Eggt in Sour
Cream Sauce"' Iecipe, the yolks
are combined with some cooked
ham and mustard, The sour
cream sauce is poured over the
stuffed eggs, sprinkled with
crumbs then baked. Devilled
Eggs with Ham Rolls" blend these
two favorite foods with fresh as-
paragus to.provide a feast for the
eyes as well-as the palate. A
zesty cheese sauce is poured over
the eggs and ham rolls before
they go into the oven,
TO HARD-COOK EGGS
Do your liard-cooke'd eggs
soineti ines have a dark coating
around -the yolks? This detracts
greatly from their appearance
and can he easily avoided by
careful cooking. It is important
to use a moderate temperature
and to cool the eggs quickly.”
Cover eggs with cold watevand
bring quickly,,,to a boil. Reduce
heat immediately to keep water
below simmering for 20 to 25
minutes, Chill immediately in
cold water. To make it easier
to peel eggs later, crack the
shells while they are Cooling.
Incidentally, if You have trouble
removing the shells'from cooked
eggs, this is a sure sign of a
really fresh egg.
SCOTCH EGGS
1 pound sausage meat
1 tablespoon prepared mustard
1/8 teaspoon pepper •
6 hard-cooked eggs
3/4 cup fine dry breadcrumbs
1 egg, beaten
1 tablespoon water
-Combine sausage meat,
mustard and pepper. Divide in'
6 equal portions and wrap a ,
portion around each egg. Roll
in breadcrumbs, then dip ,in
combined egg and water. Roll
in hreadcrumhs again. Place in
greased shallow baking dish and
hake at 400 degrees F until
browned., about 30 minutes. Turn
once during cooking. Cut into
halves lengthwise. Serve hot or
cold with chili sauce or mustard
mayonnaise, 6 servings.
STUFFED EGGS IN CASSEROLE
9 hard-cooked eggs
4 tablespoons butter
1/4 cup finely 'chopped onion
1 can (10-ounce) mushrooms,
finely chopped
1 tablespoon catsup
3/4"teaspoon salt
1/4 teaspoon pepper
1 tablespoon finely chopped'
parsley , - - -
1 package (12-ounce) froen
peas' OR
1. can (19-ounce) peas
Cut eggs in half lengthwise,
remove and mash yolks, Saute
onion and mushrooms in butter
until lightly browned. Thorough-
,
4 combine yolks with onion
mixture, catsup and seasonings.
Fill whites with yolk mixture.
Cook frozen peas then drain, OR
drain canned pea.s. Add peas to
greased rectangular baking dish.
Arrange stuffed eggs on peas.
Prepare the following cheese
sauce:
5 tablespoons butter
5 tablespoons flour
3/4 teaspoon salt .
1/2 cup liquid from mushrooms
2 cups milk
cups shredded medium
cheddar cheese
1/4 cup fine dry breadcrumbs
1/4 cup shredded cheese
Melt butter, blend in flour
and salt. Gradually add liquid
and cook, stirring constantly,
until thickened (about 5 mins. )
Add cheese and stir until melt-
ed, Pour sauce over eggs and
peas., Mix crumbs and cheese,
sprinkle over casserole, Bake
at 3'75 degrees F until thoroughly
heated (20 to 25 minutes).
6 servings.
DEVILLED EGGS
WITH HAM ROLLS
6 hard-cooked eggs
1/4 cup mayonnaise , .
1 tablespoon prepared mustard
1 teaspoon finely chopped'onion
Dash pepper
1 pound asparagus, cooked
Che ese

2 tablespoons butter
2 tablespoons flour
1/2 'teaspoon salt
1/2 teaspoon dry mustard
1/8 teaspoon paprika
cups milk
3/4 cup (3 ounces) shredded
cheddar cheese
Cut eggs in halves and re-
:move yolks. Combine egg
...yolks, mayonnaise, mustard,
onion and pepper. ,Fill whites
with yolk mixture, Roll 2 or 4
asparagus spears in each slice of
ham, Arrange eggs and ham
rolls in greased baking dish.
Cheese Sauce: •
Melt butter, stir in flour and
seasonings, Gradually add milk
and cook, stirring constantly un-.
