Back in 'the hive more wprkers are waiting to receive the harvest. Some store the pollen and others the nectar. The bees fan the nectar in the waxen cells of the honey comb with. their wings causing the moisture to evaporate. As each ceIl is filled,' the bees seal it with wax. The beekeepers know just when and how to' remove these honey-filled frames safely. Some honey is sold"right in the comb but most is extract- ed,' It is heated and some re-, mains in the liquid to be sold as such. Some of the liquid hon. ey is seeded with honey ceys- telt, and this makes a fine, gran- , ulated, smooth-textured pro- duct which is sold as "creamed honey" Most of the honey on. the market is Canada-No. -I grade (or No. 1 within some prov- inces). The honey is packed in regis- tered peeking plants or by reg- istered producer graders under- the •regular, supervision of Can-. ada Department of Agriculture inspectors. -The inspectors also check samples of-honey from the plants and from retail stores.
