cause they display an apple-cranberry filling which is as de-
licious as it is colorful. The home economists of the Canada
Department of Agriculture planned these pies as special

The 4-H club girls, their moth-
ers and leaders, attended a meet-
ing in Zurich on Wednesday
evening at which the Home Ec-
onomist, Miss Susan Heard
showed a film on the prOper way
of cooking meat.
The skating rink operated by
the Orange Lodge was opened
for skating last week. There 4s
public skating on Tuesday even-
ing and Saturday afternoon and
evening. '
Mr. Albert Craig is at present
a patient in the Clinton Hospit-
al. We hope he is soon able to
return home.

It has. all, the advantages of long
shelf-We and is economical to
use. It provides instant insurance
that the family will net run out
of milk. Skim milk powder is
real milk, not a substitute. It
has all the excellent protein and
calcium Of - whole milk but is
low in calories because the fat
has been removed. It dissolves
instantly in water and the pro-
portions for reconstituting .it are
stated on the patkage.
Skim milk powder is sold in
various size-packages and under
different labels. However, no
matter what the brand name, it
must be stamped Canada First
Grade before it goes on the mar-
ket. This means that the powder
has been carefully checked and
peeked sanitary conditions to
come up to rigid quality stand-
ards enfomed by the Canada De-
partment of Agriculture.
It is usually more economical
to buy the large -size packages.
Since one pound of the powder
makes 4 quarts of skim milk,
the saving per quart is clearly
evident.
Since skim milk powder tends
to pick up moisture when expos-
ed to air, the package should
be kept carefully closed after
using to avoid "caking". When
the powder is mixed with water,
it should be treated exactly as
fresh milk and kept refrigerat-
ed.
Skim milk powder can be used
in many, ways other than for
beverages. It can be mired with
dry ingredients in baking, sau-
ces, milk desserts, etc. 41nd the
requiied amount of water added.
It provides extra protein and
calcium when incorporated into
dishes such as meat loaves, un-
cooked cereals, etc. With main
dishes in mind home economists
have created three recipes us-
ing. skim milk powder. Always a
family favorite, this "Marcaroni
and Cheese" -recipe is bound to
please. Cheese is combined with
skim milk powder in the "Baked
Pancake" use minced beef and
extra protein is supplied by the
skim milk powder and eggs.

APPLE AND CRANBERRY PIE
PaStry for crust 9-inch pie
11/2 cups cranberries
1 cup sugar .
14i tablespoons quick-cooking
tapioca
Dash salt . •
4 cups thinly sliced apples
Line pie plate with half 'the
pastry. Put cranberries through
food chopper or blender. Mix
sugar, tapioca and salt. Com-
bine cranberries, sugar mixture
and „apples. Turn-into. pie shell.
Top filling, with heart-shaped
pastry cut-outs or cover with
remaining pastry, seal edges
and cut steam vents. Bake, 10
minutes at 450°F. Turn control
to 350°F and -continue baking
until pie is golden brown (25 to
30 minutes).
ONION' SQUARES •
2 cups sliced onions
2 tablespoons butter
2 cups biscuit mix
Y4 cup (3 ounces) grated ched-
dar cheese .
% cup milk

1 pound minced beef
14 cup chopped parsley
1 tablespoon Worcestershire
sauce
% cup flour
1 teaspoon salt
%teaspoon pepper
% teaspoon marjoram
2/3 cup skim Thillk -powder
2 eggs, beaten
,2 cups water
Saute onion and celery in mel-
ted butter until onion is tran-
sparent, about' 5 minutes. Add
beef and brown: Stir in pars-
ley and Worcestershire sauce.
Mix flour, seasonings and skim
milk powder. Gradually ,add
combined -eggs and water. Add
beef mixture. Pour into greased
baking dish or frying -pan (f0-
inches diameter). Bake at 375°F
until browned and set, 35 to 40
minutes. Cut wedges and serve
with tomato sauce. 6 servings.

2 cups macaroni (8-ounce
package)
3 tablespoons butter ,
3 tablespoons flour
% teaspoon dry mustard
% teaspoon salt •
% teaspoon paprika
Dash cayenne
11/2 cups water
% cup. skim milk powder
2 cups grated cheddar cheese
(8 ounces)
1/3 cup buttered breadcrumbs
Cook macaroni in boiling sal-
ted water (10 cups water, 2%
teaspoons salt) until tender,
about 15 minutes.
Melt butter, blend in flour
and 'seasonings. Add skim milk
powder. Gradually • add water
and cook, stirring constantly,
until smooth and thickened,
about 5 ,minutes. Add cheese
and stir until melted. Combine
macaroni with cheese sauce and
pour into. greased baking dish.
Bake in a 350°F. oven until
lightly browned, 20 to 25 min-
utes. Sprinkle with buttered
breadcrumbs, return to oven to
brown 'crumbs, about 5 minutes.
6 servings.

Apple . pies are a favorite -at
anytime: For Valentine's Day,
you can bake a special' apple
pie - a delicious valentine for
the whole family.
The home econamists dressed
up one pf their favorite apple ,
.pies and now pass the xecipe
along to you. It's "Apple' and
Cranberry Pie" which may be
made as a one-crust pie so that
the ruby red color will show.
Pastry cut-outs in the shape of,
hearts may be placed 'on the
filling before the pie is baked.

Arrange 4 slices buttered

er, and beaten. eggs. Pour cus-
tard mixture over bread. Bake
at 350°F until puffed arid brown
(30 to 30 minutes). Sprinkle with
crumbled bacon. 6 servings.
