It may be mple or elegant, de- , pending on e occasion but it
should be case and 'easy on the
hostess.
When planni g a sprin• gtime
brunch it seems natural to fea-
ture eggs. Home economists sug-
gest an omelet or "quiche" as
the star. attraction. Each omelet
recipe uses six eggs. The "Fluffy
Ham Omelet" requires a large
frying pan because the egg whites
are beaten separately ,and folded
into the yolk mixture. It is star-
ted on top of the stove, finished
in the oven, and served on a warm
platter, garnished with "Sauteed
Apple Rings". The itChinese
Omelets" are small ones and
contain fresh mushrooms, cooked
poultry meat and bean sprouts.
A "quiche", that old world
favorite from France, is a baked
pastry shell filled with savory
custard enhanced by, cheese,
crumbled bacon and other ingre-
dients. It is, returnedIo the oven
Isto bake until the custard is set
and is served hot in wedges as the
main course:- If desired, the
"quiche" may be made into in-
dividual tarts. , "Quiche Cana-
dienne" contains grated old ched-
dar cheese. The "Mushroom
Quiche" will be well received by
the mushroom fancier. Each re-
cipe is made with three eggs.
Because the pastry may be baked
ahead, and the filling combined
just before the guests arrive, this
type of main course should rate
high with the hostess.

away". Mrs. H. Williamson

service is set, for April 5 with
Mrs. Miner from Exeter, the
U.C.W. president as ,speaker.
The unit accepted an invitation
from Mrs. cliff Ritchie, to meet,
at their home with our families
for a social evening next Tues-
day.

1/4 teaspoOn salt
1/8 teaspbon. pepper
1 cup commercial"sour cream
6 egg yolks, beaten
1 cup chopped cooked ham
6 egg • whites, stiffly beaten
• 1 tablespoon. butter
Beat salt, pepper and 1/2 cup
of the sour cream into egg yolks.
Add ham. Fold whites into yolk
mixture. Heat butter in t. 10-inch
frying pan until a drop of water
sizzles": Pour in omelet and
spread evenly. Cook slowly until
very lightly browned on bottom
(3 to 4 minutes). Place in 350 deg.
F. oven and bake until set (10 to
15 minutes). Slide on to serving
dish, spread with remaining 1/2
cup sour ;:ream and' garnish with
'sauteed apple rings. Ciit.in we'd-

• Sauteed Apple Rings
2 tablespoons butter
1 tablespoon brown sugar
1/8 teaspoon cinnamon
3 red apples, cored and cut
to rings
Melt butter, stir in brown •
sugar and .cinnamon. Add apples
and saute over medium heat until
tender (3 to 4 minutes each side).

1/2 cup diced celery
3 tablespoons butter
2 cups sliced mushrooms
(1/2 pound)

the manse on Sunday night with
a good attendance. The many
friends of Mrs. Wm. Caldwell

patient in Clinton Hospital.,

a successful St. Patricks Tea and
Bazaar on Saturday.

6 ' strips -fried' crumbled bacon
3/4 cup grated old, cheddar
cheese
1 tablespoon ,flour
3 eggs', beaten
3/4 cup light cream
'1/4 'teaspoon salt
Dash pepper
2 tablespoons grated old
cheddar cheese
,Sprinkle bacon In pie shell.
Mix 3/4 cup cheese with flour , •
and .sprinkle over bacon. Com,-
bine eggs, cream and seasoningS

with remaining cheese. Bake at
350 deg.F; until custard sets
(30 to 35 minutes). 6 servings.
Quiche Tarts - Reduce cheese
in above recipe to 2/3 cup and
custard mixture to 2 eggs, 1/2
cup cream and 1/8 teaspoon salt.
Fill unbaked tail shells and bake
at 425 deg.F. for 16 to 18 minutes.
Makes 16' small tarts.

2 cups sliced Mushrooms

1 tablespoon flour
1Y2 teaspoon dry mustard
