• To many people honey is a
familiar sweetener and spread -
a quick energy treat, convenient
to have on hand, It's special flavor
and aroma, however, should not,
be overlooked for cooking and
baking. Home economists_ have
had many sweet treats made with
• honey and are happy to pass along
the following information and
tested recipes to you.
They advise that, when
-substituting--honey ro-r -sugar in a
recipe, the liquid should be
reduced. One cup of honey may
replace one cup of 'sugar and the
liquid • should be cut by one-
quarter. With baked, goods, not

TMs delicious 'Honey Applesauce Cake" tested by home economists contains honey in
both cake and frosting. Cakes made with honey are moist and remain fresh in storage. The
honey gives distinctive flavor to baked goods.
1/2 teaspoon cinnamon
1/2 teaspoon allspice
1/2 to 1 teaspoon ground cloves
1/2 cup chopped nuts
3 cups flour
Beat the' eggs well, add sugar
gradually and ',continue beating
until light. Stir-in honey and oil.
Add dry ingredients alternately
with warm tea and mix
thoroughly. Pour into kgreased
pan and bake at 350, degrees F..
until done (about 35 minutes).
Note; Cake may be topped• with

Milk and(' 1
Honey '
These two familiar foods
share' an ancient heritage. In
the bible there are about twenty
references describing Palestine
as the "land flowing with milk
and honey". Honey has continued
to be a favorite sweet down
through the ages. •
Supermarket "shelves are
well-stocked as the. result of a
bountifitl honey harvest last fall.
The honey generally available is
Canada No.1 grade and there are
"foul- color classes - White,
Golden, Amber and Dark. Al-
though color is no indication
of quality it is related to the
flavor, the lighter the honey the
more delicate the flavor. The'
consumer also has 'the choice
of "liquid" or "creamed" honey.
Creamed honey is uniform and
creamy and more suitable for
spreading but the liquid is easier
'to measure for use in recipes.
They may, , however, 'be used
interchangeably in recipes. Both
liquid and creamed honey may
be "pasteurized". This means
the yeasts which might cause
fermentation have been de-
stroyed. Honey, so treated, may
'be stored at -room temperature
and will keep almost indefinitely.
Milk combines with honey to
make delicious drinks and
puddings. Horhe economists say.
that honey' can be substituted for
the same amouat of sugar in
such combinations as egg nogs,
milk shakes and custards. -
HONEY EGG NOG - Combine
three ,beaten eggs, two tablei-
poons honey and a dash of salt
then add two cups milk and one
teaspoon vanilla. Strain and chill.
Makes about 3 cups.
PEANUT BUTTER SHAKE -
Cream one-quarter cup peanut
buttdr, two tablespoons honey
and one-eighth teaspoon salt.
Gradually beat in one-half cup
of milk, Add two and one-half
cups more milk and one pint
vanilla ice cream. Beat until
smooth. Pour into chilled
glasses. Makes about 5 cups.
BAKED HONEY CUSTARD
4 eggs or 8 egg yolks
1/3 cup honey
1/4 teaspoon salt
3 cups hot milk
1 teaspoon vanilla
Beat eggs with honey and salt
and Stir in milk and vanilla.pour
into 6 custard clips or a baking
dish and set in A pan of hot
water. Bake at 350 degrees F
until a silver knife inserted in
the center comes out clean (40
to 50 minutes). 6 servings. For
extra flgiVor at serving time,pour
honey over the custard as a sauce.
Restraint
Farm leaders at the recent
National Conference on Price
Stability in Ottawa, agree that
farmers will have much more to
gain than they have to lose if a
program is implemented to re-
strain inflation.
Malcolm Davidson, Bruce-
field, executive member and re-
presentative of the Ontario Fe-
deration of Agriculture at the
two-day meeting, believes that
farmers do not generally have
sufficient control over prices.,
It is almost impossible for the
farmer to pass on the costs re-
sulting from inflation, he said.
Other farm leaders present
at the conference included:
Charles Munro, President of the
Canadian Federation of. Agric,u1-
ture, James Boynton, Secretary
of the Ontario Hog Producers
Marketing Board; George Mc-
Laughlin, of the Ontario Milk
Marketing Board; and Gordon
Mather, Feed Department Ma-
nager for United Co-operatives
of Ontario.
Mr. McLaughlin said the
O.M.M. B., is prepared to allow
review of any increase intro-
duced during 1970 by his board. •
He pointed out that Ontario Milk
Producers have nothing to fear
from such a review since any
price increase will barely cover
increased production costs.
',Unfortunately, .any increase
will not bring return to capital
investment to the) same levels,
by any standards, that the capi-
tal business community would
accept," he. emphasized,
Thefarm group at the con-
ference , agreed that where re-
turns on investment were ade-
quate for any major commodity,
those 'producers should play their
part to hold their prices in line
with 'the criteria of the res-
training program.
Mr. Boynton stresses that
time will tell how the 'program
will work out. He emphasized
that farmers ' have been doing
more than their ,share to hold
down inflation.

A. Actually, tax will be calcu-
lated on this income over three
taxation,, years regardless of the

the pension fund. You will find in-

type of income in the Guide which
accompanies your tax form under
the heading 'Income Taxable at a
Reduced Rate'.
3.Q. My wife and 'I are separated,,
but we do not have any formal
separation agreement.,However,
I do pay he,r an allowance. HoW do
I go about claiming this allowance
on my income tax return?
A. You may not claim the al
lowance as a deduction but, if the
alloviance is sufficiently large to
constitute support, yob are en-
titled to claim married exemption
as if you were still living to-
gether.
4.Q. use my car at work from
time to time' but my employer
does not pay me' anything for the
use 0,f- the cat. When I fill out my
tax form can I' claim arty of the
expenses incurred operating this
car?
A. If it 18 necessary for you to
use your car at your own expense
in order to carryout your regular
duties, you may be entitled tcr0e-
duct a portion of your car ex-
penses in computing your income.
Your District Taxation Office will
be glad to help you determine
whether you have a claim and, if
so, the amount of the deduction.
5.Q. My father depends on me for
support and I have claimed an in-
come tax exemption for him for
years. Last year he started re-
ceiving the Guaranteed Income
SupplemenV and my claim was
disallowed. Why is that, and will
it be the same this year?
A. A person may not be
claimed as a dependant if he has
an income of more than $950.
While it was possible for your
father to receive the Old Age
P'enSion and still qualify as your
dependaht if he had virtually no
other Income, receipt of the
GUaranteed Income Supplement
would raise his income to ,an
amount well in excess of the $950
maximum and he would, there-
fore, no longer qualify. It will be
the tame this year if he continued
to, receive the Guaranteed. Income
Supplement. ,
6-.Q. I have two bank accounts and
the interest on one of them was
less than ten dollars so I haven't
received a T5 slip. Does this
mean I don't have to declare this
amount of income when I -file
my tax return? •
A. Interest credited to your
bank account is your income re-
gardless of v,aether or not you
received a T5.
7.Q. During the year I worked for
' two employers and each employer
paid the over $5,200 in the year.
Consequently, I have paid double
Canada pension Plan contribu-
tions. Can I get this money back?
A. A n employee may claim a
refund of any over deductions
or contributions when 'he files
his tax return. Be sure to com-
plete the Canada Pension Plan
overpayment section of the T1 ,
Return.
8.Q. I am ,a farmer and I used
1964 as the year 'of averaging
for income tax purpose and am
eligible to average again in 1969.
Am I required to average again
using 1969 as the year of averag-...
