Al- though color is no indication of quality it is related to the flavor, the lighter the honey the more delicate the flavor. The' consumer also has 'the choice of "liquid" or "creamed" honey. Creamed honey is uniform and creamy and more suitable for spreading but the liquid is easier 'to measure for use in recipes. They may, , however, 'be used interchangeably in recipes. Both liquid and creamed honey may be "pasteurized". This means the yeasts which might cause fermentation have been de- stroyed. Honey, so treated, may 'be stored at -room temperature and will keep almost indefinitely. Milk combines with honey to make delicious drinks and puddings. Horhe economists say. that honey' can be substituted for the same amouat of sugar in such combinations as egg nogs, milk shakes and custards. - HONEY EGG NOG - Combine three ,beaten eggs, two tablei- poons honey and a dash of salt then add two cups milk and one teaspoon vanilla. Strain and chill. Makes about 3 cups. PEANUT BUTTER SHAKE - Cream one-quarter cup peanut buttdr, two tablespoons honey and one-eighth teaspoon salt. Gradually beat in one-half cup of milk, Add two and one-half cups more milk and one pint vanilla ice cream. Beat until smooth. Pour into chilled glasses. Makes about 5 cups. BAKED HONEY CUSTARD 4 eggs or 8 egg yolks 1/3 cup honey 1/4 teaspoon salt 3 cups hot milk 1 teaspoon vanilla Beat eggs with honey and salt and Stir in milk and vanilla.pour into 6 custard clips or a baking dish and set in A pan of hot water. Restraint Farm leaders at the recent National Conference on Price Stability in Ottawa, agree that farmers will have much more to gain than they have to lose if a program is implemented to re- strain inflation. Malcolm Davidson, Bruce- field, executive member and re- presentative of the Ontario Fe- deration of Agriculture at the two-day meeting, believes that farmers do not generally have sufficient control over prices., It is almost impossible for the farmer to pass on the costs re- sulting from inflation, he said. B., is prepared to allow review of any increase intro- duced during 1970 by his board. • He pointed out that Ontario Milk Producers have nothing to fear from such a review since any price increase will barely cover increased production costs. While it was possible for your father to receive the Old Age P'enSion and still qualify as your dependaht if he had virtually no other Income, receipt of the GUaranteed Income Supplement would raise his income to ,an amount well in excess of the $950 maximum and he would, there- fore, no longer qualify.
