IT'S TIME FOR
ELDERBERRIES
For those of us who have been
anxiously waiting until the elder-
berries are ripe, this is a good
time of the year. For those of
you who aren't very well ac-
quainted with the delightful flav-
our of this fruit which grows so
abundantly along our roadsides
and in our scrub areas, you're in
for a treat!
The small, round berries grow
in large, flat clusters on a bush
which is usually 4 - 7 feet. in
height. When ripe, the berries
are shiny and dark . purple -black
in colour. Pick the berries by the
cluster, wash them, and for easy
cleaning, freeze the whole thing.
Then, using your fingers or a
coarse -tined fork, separate the
berries from the stems.
A number of recipes, ranging
from old standbys such as elder-
berry pie and jam (either alone
or . in combination with other
fruits), right through to spiced
elderberries a n d elderberry
cheese cake have .been gathered
together and are .available, free,
by writing to the Home Econom-
ist, Ontario Ministry of Agricul-
ture and Food, Box 1330, Walker-
ton, Ontario, NOG 2V0.

HARVESTING CORN FOR
SILAGE
At this time of the year many
farmers start to get, anxious
about harvesting their corn for
silage. They should, however, re-
member that harvesting the corn
too early (before the kernel mois-
ture content is below 40% ), will
result in lower dry matter yield
per acre. As well, storing mater-
ial too high in moisture can result.
in nutrient loss due to seepage.
This is particularly true with corn
in tower silos, where the maxi-
mum moisture content possible
without seepage is closely related
to the size of the silo and the
depth of the stored material. Al-
so of importance is the fact that
excess silage juices will increase
the rate of deterioration of con-
crete silo walls. Whole plant mois-
ture of approximately 65% seems
to be a good figure to shoot for in
harvesting corn for silage.
