THE CHURNS
BY REV. DUNCAN McTAVISH
One of my earliest :recollections
had ;todo with the churn. Perhaps
it: was because at a very early, age
1 was pressed into service,.in the.
matter, of butter, making. The' first
churn was, known is the Dash churn
and consisted of a•wooden barrel, a
little larger at the bottom'than•the
top'. The top was open and. fitted
%yitha wooden lid .with, a hole in
the centre through which theha:n-
dle, on the'dash operated., On the
bottom'of; the dashwere two piec-
es of wood sitting at right angles tt
each other.' with'h'oles,bored in a
them, through 'which the crearn
could gush when pressure.was;
applied
The whole process consisted of
working the dash.'up and down until'
the cream' assumed a 'hard and
Solid: nature which indicated that
butter. had come. By using., a butter
ladle, which looked like a very
large wooden spoon, the butter
was •taken from; the remaining
liquid known as buttermilk . •It was
then placed in a'large wooden con,
tainer called .a butter bowl, where
it was molded into prints and
ready for market.
1 wasn'i very old when my
mother who• often was taxed for
time; put me to work on the end •
of`the dash, a task that seemed
to: grow a bit onerous after thefirst
few strokes. But ::#the most exasper-

ating thing about it was when the
butter finally arrived; and mother
opened the churn. Like most par-
ents who •findit hard toi.believe:
their children are growing upand,.
developing into -responsible persons,
she would take the dash in. her ..
hands - give ittwo or three 'short
strokes for good luck, as though the'
butter would not be good .'unless it
had this one tpuch mare. As •a .lad
I recall .this little; gesture displeased
me very much.
• But there came the day:when I
was delivered from that .old dash
churn and found myself, working .'
.the "Daisy"-.' It consisted 'of a small
barrel -like structure with an air
tight lid that fastened downtightly
when in operation By working a
handle or• pedal, 'the.barrel was set
in motion and in due itime the revol

pleasant task than the one associat-
ed with the "Dash
