3 Ib turkey thighs or
drumsticks
1/3 cup flour
1 tsp salt
11/2 tsp paprika
pepper
%so
3 tbsp vegetable oil
1 can (19 oz) red cherries
1/2 tsp ginger
1 tsp soy sauce
2 tbsp dried currants
1/4 cup sherry
Place flour, salt, paprika and pepper in plastic bag. Shake turkey in bag one
piece at a time to coat evenly. Heat oil in frypan and brown turkey pieces.
Remove turkey from pan, discard excess oil. Add juice from cherries, soy sauce
and ginger. Heat and stir. Add cherries and currants and bring to boil. Arrange
turkey in casserole and pour cherry mixture over. Bake covered at 350°F for 1
hour. Rearrange turkey, baste with liquid and drizzle with sherry. Bake
uncovered until fork tender, about 35 minutes.
Yield: 6 servings
