Place between waxed paper and pound to 1/4 inch thickness. Cook asparagus three minutes. Drain. Place 1/4 cup stuffing on each turkey cutlet and spread to cover. Place 2 spears asparagus across one end and roll up carefully. Arrange, seam side down, on rack in shallow baking dish. Brush with melted butter. Bake at 325°F for 40 minutes. Garnish with cranberry sauce and serve with whipped potatoes and a "fresh from the garden" radish, green onion and leaf lettuce salad. Yield: 4 servings 72 ee FOOD Turkey Parts 'c) Barbecued Turkey Wins 6 turkey wings (about 2 kg) 25 mL vegetable oil 125 mL finely chopped onion 1 clove garlic, crushed 250 mL ketchup 125 mL water Tar 50 mL brown sugar 25 mL Worcestershire sauce 5 mL salt 10 mL prepared mustard dash hot pepper sauce Brown wings in oil 5 minutes per side. Drain off excess fat. Combine remaining ingredients. Pour over wings. Cover and simmer 1 hour, turning wings half way through cooking. A large electric frypan would be ideal for this recipe. Of course you'll need your metric measures! When you pick up turkey wings at the supermarket keep this recipe from Agriculture Canada in mind. Yield: 6 servings
