Tri -Color Salmon Burgers - 1 cup (1 can approx. 1 lb.) canned salmon, drained and flaked 2 tablespoons finely chop-. ped green pepper or celery Salt and pepper Mayonnaise 2 cups sliced onion 3 tablespoons cooking oil or shortening 6 hamburger ,buns, split 6 packaged process Cana- dian cheese slices 6 tablespoons chili sauce. Combine salmon and chopped green pepper. Season to taste with salt and pepper; blend in enough mayonnaise to make of spreading. consistency. Saute onion in oil or shortening, cov- ered, over low heat, until soft. Meantime, place hamburger buns split side up on baking sheet. Toast until golden in preheated hot oven (425 deg. F.) or under broiler. Lay a cheese slice on toasted surface of each botton bun 'half and bake or broil until cheese melts. Spread one tablespoon of chili sauce on each of the other six bun halves. Spread salmon mixture lightly on top of melted cheese -covered bun halves. Arrange sauteed onions over salmon; top with remain- ing bun halves, chili sauce - side down. Serve 'immediately.' In Huron During the next 'two weeks the Huron County 4-H Home- making Club Leaders will be- gin their fall work as they learn about the uses and importance of dairy projects in connection with the project, "The Milky Way". Sponsored by Home Economics Service, Ontario' De- partment of Agriculture, train- ing schools will be conducted by Miss Patricia Damude, Home Economist for Huron County. It is expected that nearly 90 leaders and assistants will at- tend the three schools at Wes- ley -Willis United Church, Clin- ton, on August 22 and 23; Le- gion Hall, Hensall, on August 27 and 28, and Community Arena, Wingham, on August 29 and 30. Through lectures and demon- strations the leaders will obtain information on such topics as milk in many forms, the manu- facture of dairy products, such as cheese, buttermilk and yogurt, the importance of home pasteurization, how to cook with milk, and meal planning. This is presented in such a form that it may be taught di- rectly to the club of 12 to 26 year olds in the local commun- ity.
