RECIPE OF THE MONTH By the Ontario Tender Fruit Institute "Buy Canada Choice Canned Fruit" MINTED PEACH LAMBIES Springlike Accent To Spring Lamb , Patties 1 lb. ground lamb 4 strips of bacon 1 tsp. salt 14 cup milk Dash of thyme or marjoram 4 or more peach halves Mint jelly. Mix ground lamb with salt. thyme, or marjoram and 'milk. Shape into 4 oval patties. Score with handle of wooden spoon. Drain' a can' of Canada Choice canned peach• halves. Arrange peach ha l v es (hollows ' up) around lamb patties on broiler pan. Place 5 inch- es from heat, and broil 12 minutes. Turn patties. Broil for 5 minutes long- er. Fill centres of peach halves with mint jelly. Top each pattie with ba- con slice. For the` first time last summer, several children, such •as this lad, had a wonderful vacation at' the Easter. Seal camps. Every gift to the Easter Seal •campaign, which. is sponsored in this area by the Seaforth Lions Club, will be of some help to a crippled child. .Aid Ar Crippled •Child rren Children with physical dis- abilities ' are being discovered by the Ontario Society for Crip- pled Children almost every day of the year. Case- finding is a vitally important Easter Seal function and is carried on in. the remote areas as well as in heavily populated towns and cities through periodic surveys. Crippled children's, surveys are conducted on a "County" basis by a special survey com- mittee composed of representa- tives from the local medical society, Easter 'Seals service clubs and the district nurses of the Ontario So,ciety for Crip- liled Children. Survey notices are sent to all physicians, Clergymen, teachers, official health agencies and com- munity groups to publicize the services available to all physi- cally infirm children under 19 years of age. The - _ families of children re ported are visited by the dis- trict nurses with prior approv- al from the family doctor. •Un- der the doctor's direction, ar- rangements can be made' for a comprete rehabilitation pro- gram embracing medicine, ther- `apics, social service, psycholo- gy, education and recreation. In addition to these facilities, there are badminton and tennis courts, , a lining patio, spacious lawns and beau- tiful flower gardens. • The main attraction is the old kiln. in the garden which was operated for over half a century and. was still in use as late as • 1920. The limestone was gathered from the beach and the kiln , was fired with driftwood, supplemented by cut, tings froryi area bushland. The limestone was burned for two days and nights, under constant watch, acid then cooled in the form of lime, Which was sold by the bushel and used in many of the' foundations of nearby buildings.
