The serving ideas arae endless, but may we remind you that -luscious layers of.1os.. cream and, sauce *ill look ever-so-itnpressive,In pretty par fait glasses this Dairy Month Of°Junei' PINK LADY 'PARFAIT (Makes 8 Servings) ,. 1(6 -ounce) can frozen pink lemonade; 1/a cup water; 2 table- spooris sugar; 1`'tablespoon cornstarch; 1 tablespoon water; 2 tablespoons butter; 1 quart vanilla ice cream. • Combine in a small saucepan, the frozen lemonade, the I/2 cup water and sugar. Bring to the boil over mediums heat: Combine cornstarch with the 1 tablespoon water; stir into hot lemonade and cook, over medium heat, stirring con- stantly, untirsmoothly thickened and clear. Stir in butter. Cool completely. Spoon alternate layers of ice cream and sauce into parfait glasses. One of the main reasons for this is that each year an average of 10,00.0 dairy farmers are leaving the business. Despite increased efficiency, high costs of operation, equipment and feed are forcing dairy farmers out of business. Nearly all S farm expenses have increased while the price of dairy foods has remained fairly constant. There is a serious shortage of farnf labour. More and more farm workers are .attracted to other industrie,,s where they can work fewer hours for more pay. If dairy farmers continue to leave the busi- ness at the ,current rate, there could be a serious shortage of vital dairy foods in Canada. The dairy industry is important to Canada's economic and nutritional health. O1 TT , _ATISIZ 30, 1966-41 rt� Perth Federation Meeting The Perth Federation of Ag- riculture, at a recent meeting, expressed the view that, while the dairy situation is far from satisfactory, it is the responsi- bility of farmers and. farm • or- ganizations to permit the .fed eral dairy policy to become ful- ly operative before Making the accusation that it will never fulfill its objective of $4.00 per cwt. F.O.B. plant. This' objec- tive cannot be reached ,until enough time has elapsed for the federal department to have received monthly milk . state- ments from processors, begin- ning with the month of April, 1966, process the statements, and, mail cheques to individual producers. • The Federation is not aware that, at any time, the price of raw milk to the producer has been negotiated or quoted on the basis of F.O.B. farm, and feel that it is desirable for the farmer to maintain ownership of the product until delivered to the processing plan T .�. "lt should• be borne in mind that the $3.25 now quoted at plants (exclusive of the 75 cent federal subsidy) is not a, guaranteed price as this is simply the price the new Ontario Milk Marketing Board and proces- sors'are able•to negotiate. Many people are aware that the province of Quebec does pay a provincial subsidy to its milk producers which means that Quebec processors are able to purchase milk more cheaply from these producers and thus place themselves in a better position for selling the proces- sed product on the Canadian market. This means that On- tario processors must face this competition even in their own province. It is apparent that such a subsidy paid by one province can upset the balance of opportunity and for this reason the Perth County Fed- eration of Agriculture feels that there is some justifica- tion for the Ontario Minister of Agriculture and 'Food to shy away from this sort of milk price supplement. The fact that there Sas b9ei considerable support of drastic action to bring the plight of the dairy farmer to the public at' tention indicates that many pro ducers of milk do feel that they have made this commodity avai- lable vailable for unrealistic compensa- tion for far too long a period.. Because of this and the. cot% start attention required by a dairy herd, many prod'uce,Cs are reconciled to the decision to cease their dairy operation. Producers who feel that they have a legitimate complaint should express their view through the County Milk Com . mittee, which is a committee elected; by and representing producers, and allow this body to explain the situation accur- ately and, if necessary, present the facts to those agencies, gov- ernment or otherwise, who have jurisdiction in this regard.
