OUR TOWN SAILING t4 A THRILLING SPORT, JAY. - FOOD t' FI .IN5 Recipes For the Rusy Homemaker MINCED BEEF TO THE RESCUE After all the holiday enter- taining, it's time to Consider the `strain on the food budget and look. for .something Jloth tasty and economical in- the meat line. Minced beef is one of the most • popular meat "stretchers" since it can be combined with many other foods.and a pound or two will provide many generous serv- ings. Minced beef is made by grinding together trimmings and some of the less tender cuts of beef such as shank, flank or neck. It is commonly Called "hamburg" and, accord- ing ccording to Food and Drug Regula- tions, should contain not more than 30 per cent of the fat which is normally on the beef used. Minced beef may also be made from round steak or chuck and is labelled as such. It is leaner and higher - priced than "hamburg". Home Economists suggest these timely recipes using minc- ed beef. You can either 'ham- burg" or minced round steak or chuck in them. —Meat_Balls in.
