Getting a soup together
can be an interesting experi-
ence. It's, a good way to else
up leftovers because almost
anything in the refrigerator
can go into it.
For liquid, try seasoned.
tomato juice, chicken broth. ,
beef stock or cooking liquid
.from vegetatees. Almost; any
vegetable goes. The list .is
endless. - tomatoes. pleas,
carrots, celery, cabbage,.
mushrooms, corn, rutabaga,
beans or whatever strikes
your fancy.
Since soup ingredients
vary in their cooking times,
the trick is to add the
quick -cooking, ingredients
near the end, so that every-
thing is done at the same
trate. Fnr example. whole
vegetables or large vegetable
pieces take from 45 to, 60
minutes, whereas sliced
vegetables or small vege-
table pieces need about 30
minutes.
When the shape of the
vegetable is important, as
with mushroom and zucchini
slices, just pap, them in for
the last 'l0 minutes. 'Phis is
just about right for frozen
.t'egetables as Well. ` .Add.
canned or cooked vegetables
at the last minute and heat
until the soup' returns' to a
simmer. By adding the vege-
tables at the right time.
you'll avoid overcooking
them and ensure that they
retain most nutrients.
Seasonings are also very

spaghetti is tender !about 10

bowl of soup with 1 teaspoon

bay leaf. garlic. thyme. all-
spice. dill, chives and dry
mustard.

strone Soup', was developed.

with a vegetable salad and a
fruit for. dessert. Further-
more, it's a 30 -minute home-
made vegetable soup.
