referring to the art of cake
decorating, "but it helps,"

traditional hearts and flowers •
for a lady's birthday to a jack

Pam generally uses• mixes,
• for her cakes because "they
are more roof" than!

step when decorating a cake
is not the. intricate, :flowers
and .scrolls' as might be
expected, but.. getting a••
glassy -smooth' bottom layer
of icing on which to put the
decorations.
In every spare corner in
the . farmhouse where Pam:
lives with her parents, brot-
her, and miniature schnauzer

containers of icing flowers. -
Pam ; mass-produces the.
roses, mums and bluebells)
andstores them for use on,.
future cakes. Pam will spend
an entire afternoon just,
making these flowers out of
"royal icing" which hardens
for easy storage and use.

cakes. for peoples' birthdays:
when she was in high school',:
At first she "just fooled:
around" but later, when her
mother took lessons and. Pant.
saw the results; she became,
more interested in the art.
When; a cake decorating
competition was• held ..for a
picnic'. ,at her high ;school,
Pam's friends suggested that
she enter it. Pam bought a '
Raggedy-Annshaped pan for
the occasion, decorated the
cake and won.
Pam says she is now
addicted to the art. Although
it wouldn't pay her . to
decorate cakes as a living -it
takes Pam from two hours to
decorate an average cake, up
to thirty-five hours for an
elaborate wedding cake, and'
she doesn't get hourly wages
--Pam is "not complaining"'
because it is fun.
Cake decorating is not'
hard to learn, according to
, Pam, but it takes'a. lot of
practice.• "After you learn
the basics, you can do'
anything." •

courses will continue, taught.

decorating and . veterinary
science and Pam replies that
she will use "fancy stitches"
when. she is a vet. ..
Pam's cakes are in great
demand " in. Brucefield and
surrounding areas. Some
.days ' Pam will work for 12
hours and make and decorate
as many as four cakes. Pam
freezesher cakes before
decorating them and . says
that they are much easier to
decorate that way.
Someone who.. has
achieved . the perfect round-
topped cake would have to
give up their technique to
decorate a cake as Pain does.
The pan ofbatter is banged
on a counter surface as the
first. step in producing the
flat-topped 'cake that is, nec-
essary for the art. The
greatest part of the batter is
heaped around the sides of
the pan and the pan is
wrapped in wet cloths to
achieve .a cake suitable for
decoration. •
Pam says that tine of the
best things about cake dec-
orating is. that you can cover'.
almost any mistakes by simp-
ly adding an extra flower or
two. The ladies taking the

of dealing with ntistaikes.

popularity
Pam says that cake decor-
ating is gaining •popularity in
Canada, although it used to
be popular only in the United':
States. A Can -Am com-
petition, in classes ranging
from "beginners" to "for-
eign techniques." Pant, who
is still considered an amateur
in this competition says it is
unbelievable what people
can do.
,Pain orders materials such
as specialized pans and icing
tube : tips from a • factory in
Chicago, through a store in
Brantford. She has set up a
display of decorated cakes
• (icing on styrofoam or sugar
bases) and decorating mater-
ials for sale in her parents'
general store in Brucefield.
In Chicago there is also an
eighty hour, two week dip-
loma course in -cake decor!
