SWEEN 'N SOUR
APPLE CABBAGE ROLLS
A unique cabbage roll - the ultimate
marriage of tastes and textures featuring
Ontario apples.
2 apples, chbpped, ,
2 large heads, red cabbage
1 Ib. (500 g) ground beef, browned
1/2 Ib. (250 g) Fresh bean sprouts _
2 cups (500 mL) cooked rice
1 cup (250 mL) raisins
t stalk celery, finely chopped
1'/2 tsp. (7 mL) salt ,
1 tsp. (5 mI4 pepper
'/• tsp. "cloves
SAUCE:...n1"L)
2 cups (500 mL) apple juice
2 tbsp, (30 mL) cider vinegar
2 tbsp. (30'mL) brown sugar
2 onions, thinly sliced
1 tsp. (5 mL) caraway seed
1 tbsp. (15 mL) cornstarch
2 tbsp. (30 mL) cold water
Destem and deeply core cabbages. Bring
large pot of water to a boil, to which 1
tablespoon (15 mL) vinegar has been added;
this will help prevent bluish discoloration of
the leaves. Place cabbage into boiling water.
Remove leaves as they loosen, continuing
until just the small inner leaves, remain
intact. Remove from water. Bring water to a
rapid boil and plunge in the loosened leaves
for 3 minutes. Remove leaves and drain.
Repeat wvith second cabbage.
Combine chopped apples, browned
ground beef, bean sprouts, cooked rice,
raisins, celery, salt, pepper and cloves in
large bowl. In separate bowl combine apple
juice, cider vinegar. brown sugar, onion and
caraway seed. (Cornstarch and water will be
used to thicken the sauce after baking the
rolls).
` Carefully slice excess core from back of
cabbage leaves without cutting through.
Spoon, filling onto stem end of each cabbage
leaf. Carefully roll up leaf around filling,
folding ends in so that filling is completely
contained. Secure cabbage rolls with tooth-
picks or place seam end down in a 9x13x2
inch (4L) non-metal baking dish. Pour sauce
over cabbage rolls. Cover tightly with foil.'
Bake at 375° F (190°C) for 50 minutesor
until cabbage is tender. Remove cabbage
rolls to a platter; cover and keep warm. Pour
sauce into small saucepan over medium
heat. Combine cornstarch with cold water;
stir into simmering sauce. Cook, stirring
constantly until thickened and translucent.
Serve sauce aver hot cabbage rolls. Makes
10 servings<
