ALMOND FLOUR MUFFINS
A blender is needed for this recipe.
Place about 1/2 Ib. almonds (they need not
be blanched) in blender and run until they
are ground into a flour -like consistency. You,
can substitute some of this flour for regular
flour in a favourite muffin, cookie, or cake
recipe. Or you can bake muffins made
entirely with this flour as follows:
In blender place '/. Ib. butter (or margarine)
Add:
3 eggs
'/2 cup honey
1 tsp. vanilla (optional)
Run blender for about 45 seconds.
Pour blender contents into bowl containing
about I-'/1 cups almond flour.
If consistency is too liquidy, add more flour.
If consistency is too stiff. add a little milk.
Beat well. Line cupcake tin with liner
papers. Bake until golden brown in a
preheated oven (350°F) for about 30
minutes.
