sten eggs help build hospital addition
The hospital building fund will see another
$1,500 as the result of an easter fundraiser
and the work of the hospital's emergency
staff.
Joan Chesney, Darlene Hetherington,
Jane McNaughton, Mary Coyne and Joyce
McClure -all emergency staff- have been
busy making 1,017 easter eggs they are sell-
ing for $2 each, to participate as a group in
the hospital expansion fundraising
campaign
It took them 13 evenings, about four hours
per night to make all the eggs, and from it
they hope to realize $1,500 after expenses, to
be donated to the building fund.
Mrs. Chesney says Darlene Hetherington
came up with the idea to make and sell the
eggs, and the emergency staff's hope was to
be able to pre -order enough Easter eggs to
make it worthwhile
"I figured if we got orders for 500 we'd be
doing well," says Mrs. Chesney, "but we got
467 in the first week, I couldn't believe it."
The chocolate eggs are triple the size of a
regular egg, have a yellow and white cream -
filled centre, and are decorated with a rose
of icing and the customer's name written in
icing
Mrs. Chesney says the emergency staff
will be making the eggs again. next year and
in the third year of the fundraising
campaign
Each of the hospital's departments have
been doing fundraising activities. The lab
staff held the winter interlude earlier in the
year, and on May 20 and 21, the Victoria Day
weekend, physiotherapy, maintenance and
pharmacy will be hosting a rummage sale.
Purchasing and housekeeping will be offer-
ing breakfast on the same dates. The rum-
mage sale, dubbed the spring lawn sale, will
be held on the hospital lawn, weather per-
mitting. Everyone in the community is
welcome to support by donating items and
shopping for others. To donate or get more
information contact Yvette Binnendyk in
pharmacy, or Carol Hunt, Mary Margaret
Nash or Carol Bowker in physiotherapy.

Predicting this sprit s 's sap run
The sap tapping season is almost upon this there is little retention of water, or where study conducted by OMAF in 1987 showed

have already tried a few taps in the Seaforth be at a greater risk
. , operator with 1,000 taps, excluding operator
area labor and management, was close to $7.
"The study the ministry did last year
shows there is a profit to he made ui the
maple syrup business and that may have en-
couraged some people to get into it," Mr
Butler says. 'There has been brisk action at
equipment suppliers., A number of nes
operations are opening up, and existing ones
are expanding.'"
In Ontario, an estimated 90 per cern o:
maple syrup production is sold by producer:
on their farms. About six per cent is sold in
bulk in the wholesale industry and bulk pro-
cessors, while the remaining four per cent is
used on home farms.
It takes up to 40 litres of maple sap to
make one litre of maple syrup. Maple taffy , -
maple butter and maple sugar are other
products from maple sap.
The challenge maple syrup producers
face is making sure consumers are familial
with their product.
"Many Canadians come from countries-
where
ountries
where they never heard -of maple syrup. Ef-
forts are being made to do special promo-
tion, and education through schools."
butthe season wil, soon begin in
earnest, and many are wondering how the
sap will be running this year
John Butler is the provincial maple syrup
specialist with the Ontario Ministry of
Agriculture and Food. and he has some
ideas about how the past veartii weather will
affect the sap run,
According to Mr. Butler the past season's
mild winter shouldn't have any detrimental
affect on the sap run. He says there are
many winters on record in which there was
virtually no snow, but there was still a de-
cent run of sap in the following spring.
One weather factor Mr. Butler is less sure
of is the drought last summer.
"It is possible that last 'year's drought
may have an effect, but we won't know until
we see the run at the end of the year," he
says. "It was an additional stress on the
trees and it may affe0t the sugar content in
the sap."
Mr. Butler adds that the effects of the
drought may be felt, if they are felt at all, in
varying areas of the county. Trees in a site
where there is shallow soil, in a site where

Still. Mr. Butler says these other factors
will not have as great a determining effect
on'the sap run as the temperatures through
upcoming weeks.
"Ninety per cent, success or failure, will
be determined over the next few weeks," he
says. If there are warrn days and frosty
nights over the maple syrup season, Mr
Butler predicts it will be a mostly successful
season regardless of other factors,
Mr. Butler adm& it is difficult to set ex-
acttemperatures needed for a good sap run,
but says if there is a good frost the night
before, then the mercury reaches five
degrees celsius or higher the following day,
sap should be flowing.
Mr. Butler says the maple syrup industry.
is alive and well in Ontario.
"Last year, over 714,000 litres were pro-
duced in Ontario. The five-year average
from 1984 to 1988 was just over 736,000 litres,
and since the demand for this excellent pro-
duct is so high, the selling price is good." he
explains.
The average retail price received by On-
tario producers m 1988 was $14 per litre. A
