Grow More ntario Wheat.
Why do not th farmere of Ontario
grow more whea ? Why do not the
people of Ontario buy blended flours,
containing their own home-grown
wheat?
Manitoba whe''!!+t flour makes a big,
strong loaf, bat the bread is course, and
is neither as iuvit.ug in appearance nor
pleasing in taste, as that made of a
blended dour. When it comes right
down to quality, blended floor makes
the best bread anipastry in the world.
Yet many of our c wn people are using
Manitoba flour het aware of the facts,
helping the Manit ilea farmer to get rich-
er, and driving tl is Ontario farmer to
raising less profita,ile crops.
Toronto seems .o be about the only
place in this proviece that really knows
the worth 02 bian4vd fieur. And it is
largely due to the! efforts of one man—
George Weston, 11 e baker—that this le
the °use. When Manitoba wheat flour
first appeared, iG became very popular
because it made a ig loaf. But the bread
was course. At bis time Weston was
running only two ovens. He thought
there were enoug 1 people in Toronto
who would appreceate the difference bo•
tween quantity sad quality, and he de.
termined to bake t real old-time home-
made loaf, using a blended flour. When
he finished his first baking, he Tonna
that the loaf was of regulation weight
but smaller than a loaf made of Mani-
toba flour. Weetein carried his bread to
various grocers, asked them to offer it to
their customers, a d if it Was not sold
that be would tak it bank. The next
day every loaf wa gone, and the grocers
had orders for twee as much. In a week
he had to start ne g ovens, and it Was
not long before h s was selling 60,000
a week. This is rhat blended flour did
for one baker. 0 : course, others, seeing
the suooess of Gat rge Weston, naturally
adopted blended tour, To -day, 75%q of
the bread baked i Toronto is made of
blended flour. here is no doubt but
what blended iso a --milled of Ontario
wheat with som Manitoba—not only
make the best Wad and pastry, but
yield more bread, oto., t0 the barrel.
By usingblende i flours,it would create
a deniand for Ont trio wheat, induce far -
niers to grout' mot wheat, and keep all
the money spent for wheat and flour
right here in Ont rid, setts adding to the
value of Ontario attna.
