Michael Potters is the executive chef and general manager of The
Little Inn of Bayfield. He is recreating the food culture of the area
and offered his creations at the Libro Community Hall in Clinton
on December 14 along with others in the Huron Chef's League.

Artisan roasted coffee gave a rich aroma to the Libro Community
Hall on December 14 as Leanne Kavanagh and Shaun Henry
served their brews from Shop Bike Coffee Roasters in Bayfield.
They are memers of the Huron Chef's League.

and consider the Huron Chef
League.
Chef Spencer Vail of Goder-
ich is an organizer of Huron
Chef League, which was
formed to bring together the
chefs and food producers of
Huron County. Vail explains,
"We are trying to build collab-
oration between culinary pro-
fessionals and those who
grow foods locally to create a
thriving food culture." The
area has an array of boutique
producers and artisan farms.

involved in a process of learning about Adaptive Phased
Management (APM), Canada's plan for the safe, long-term
management of used nuclear fuel. The Nuclear Waste
Management Organization is working collaboratively with the
community to advance preliminary assessment studies.

The Huron County Eco-
nomic Development Strate-
gic Planning Celebration,
held at the Libro Community
Hall on December 14, was
one of the first opportunities
where the Huron Chef
League has come together to
set up their various tables to
offer their creations to those
in attendance. Seven differ-
ent chefs and artisan pro-
ducers were spread across
two walls of the hall to allow
the crowd to leisurely sam-
ple the delectable treats with
the added opportunity of
being able to ask questions
of those who had prepared

them. It was interesting to
hear the questions and
answers at each station as
the chefs explained the vari-
ous ingredients used in the
dishes and, often, where
they had been sourced
within Huron County. Each
table held cards and flyers
with information of both the
appetizers or beverages
being served and of the busi-
ness providing them, making
this an educational experi-
ence, as well as an opportu-
nity to try new tastes.
Marlene Beyerlein of Bay-
field Berry Farm, located at
77697 Orchard Line, was serv-
ing glasses of juice blends
based on raspberries and
other fruit grown at Bayfield
Berry Farm. The location
hosts a farm market, restau-
rant, bakery and catering. Pro-
duce is also sold in local farm
markets. You can find more

Michael Potters is the
executive chef and general
manager at The Little Inn of
Bayfield. All of the rooms at
the inn have recently been
renovated. Potters was
brought in to recreate the
food culture that had histori-
cally been the feature of the
location. Potters previously
was chef in both Toronto and
Prince Edward County.

Frank Ihrig was raised on
the farm at Hessenland and
is now the second genera-
tion owner and head chef
at Hessenland Country Inn,
located between Grand
Bend and Bayfield. Ihrig
studied Hospitality at the
University of Guelph, fol-
lowed by a move to Europe
to apprentice and obtain
his chef's papers in Ger-
many. His specialty is Euro-
pean cuisine, but insists on
the freshest ingredients and
local fare. Hessenland's
specialty is weddings, ban-
quets and events. More
