Give Christmas crafts new look
Use the new narrow ribbon instead of
thread for traditional craft items, says
Margaret Loewen, clothing and textiles
specialist with the Ontario Ministry of
Agriculture and Food's rural organizations
and services branch.
These polyester ribbons are sold in 1/8
inch and 1/16 inch widths and are washable,
dryable, color -fast and can be dry cleaned,
need no ironing and won't shrink.
Tie crib quilts or other quilted projects with
1/16 inch ribbon. Use a large chenille needle

Update candlewicking projects using 1/16
inch double-faced satin ribbon instead of
using candlewicking cotton.
Select a pattern, transfer the design to
pre-shrunk muslin and place in an embroid-
ery hoop. Cover each marked dot with a
French or Colonial knot, using a large -eyed
needle.
Try a small candlewicking project first,
such as a sachet.

Straight talk on turkey
The cavity of a turkey is an ideal place for
bacterial growth. Play it safe this Christmas
and follow these tips when preparing
cooking and storing your Christmas turkey,
says Monica Beaumont, foods and nutrition
specialist with the Ontario Ministry of
Agriculture and Food's rural organizations
and services branch.
Thaw turkey in the refrigerator or in cold
water. Allow 10 hours per kilogram„ (five
hours per pound) to thaw the bird in the
refrigerator or two hours per kg. (one hour
per Ib.) in cold water.
If you must thaw your turkey at room
temperature, place the bird in its original
wrap in a heavy brown paper bag, a covered
cooler or wrap turkey in a towel. This will
keep the surface cold while the interior thaws
- reducing the chances of bacterial growth.
Allow three hours Fier kg (1-1/2 hours per lb.).
Once thawed, refrigerate and cook within 24 ,
hours.
Never leave the thawed turkey sitting at
room temperature.
Always stuff your turkey just before
cooking and never 'roast your turkey at a
temperature lower than 150 degrees Celsius
(300 degress Fahrenheit.)
Use a meat thermometer to cbeck if the
turkey is done. The thermometer should
register 70 degress C (160 degrees F) in the
stuffing and 85 degrees C (185 degrees F) in
the thight of an unstuffed turkey.
If a meat thermometer is unavailable, use
the following chart as a guideline: three kg.
(seven Ib.) turkey — cook for 31/2 hours. to
41 hrs.; four kg. (nine lb.) turkey — cook for
four hours to 43/a hrs.; five kg. (11 lb.) turkey
— cook for 41/2 to 51/4 hrs.; seven kg. (15 Ib.)
turkey—cookfor5% hrs. to six hrs.; nine kg.
(20 Ib.) turkey — cook for 57/+ hrs. to 6'/2 hrs;
11 kg. (24 lb.) turkey — cook for 61/4 hrs. to
seven hrs.
The turkey is done when the juices run
clear and the drumstick moves easily.
Never partially cook a turkey one day and
complete cooking the next because this will
encourage bacterial growth, according to Ms.
Beaumont.
After serving, always remove the stuffing
from the turkey and the cooked meat from the
bones. Refrigerate for three to four days or
freeze for up to one month.
LIGHT CARROT LOAF
Chock full of sweet, crunchy carrots,
this loaf is light and golden.
4 carrots, peeled
2 eggs
2 cups sugar
1 cup vegetable oil
1 tsp. vanilla
3 cups all purpose flour
3 tsp. baking powder
1/2 tsp. salt
'/ tsp. baking soda
1/2 cup finely chopped walnuts (optional)
Topping
1 tbsp. melted butter
1 tbsp. milk
1/2 cup brown sugar
'/< cup featherstrip coconut or finely
chopped walnuts
Grate c make 2 cups. Grease and
flour tw loaf pan . In large mixing bowl
beat eg ; add sug beating well, with
electric ixer. Slowly add oil, beating
continuously: mix in vanilla. Combine flour,
baking powder, salt. baking soda and nuts
in separate bowl. Slowly beat in flour
mixture alternately with grated carrots until
just blended. Spoon stiff batter into loaf
pans.
Bake in 350° oven for 40 minutes or until
skewer inserted in centre comes out clean.
Remove from oven.
Combine toping ingredients during
baking period. Quickly spread baked loaves
with topping; return to oven and broil until
bubbly. Watch closely so as not to scorch.
Cool on racks. Makes 2 loaves.
SPICE COCOA MIX
2 cups of unsweetened cocoa
2 cups of packed brown sugar
4 tsp. ground cinnamon
1 tsp. ground cloves
3 tsp. finely ground orange rind (skip this if
you can't find the grater)
Mix all the ingredients well and pack in
jars or airtight containers.
Include serving. instructions for sift-eiv-
ing: For one serving, mix 4 tsp. cocoa with 2
2 tsp. milk in the bottom of a mug, fill with
hot milk to taste.
NOTE: For someone special, give a set of
mugs with his comfortine. aromatic mix.
