Rochus and Elizabeth Faber celebrated
their Golden Wedding Anniversary. A
family dinner was served by the family
followed by. an open house in the afternoon,,..,,,.
Many friends, .neighbors and relatives
came to wish them well and made it a very
special day for them.
They have three children including
Audrey, Mrs. Emerson Coleman, Ross and
Russell, ninegrandchildren and six great
grandchildren.
RECIPE
SZECHUAN DRAGON CHICKEN STIR -FRY
Light, easy and spicy :hot, Szechuan
Dragon Chicken adds a delicious dimension
to stir -fry cooking. In just minutes the full
flavor of the Orient can be at your table. The
key ingredients to success in many Chinese
dishes are fresh vegetables and brewed soy
sauce. This recipe takes advantage of the
abundance of carrots; zucchini and sweet
onions to provide summer -fresh flavor and
color. The characteristic taste of naturally
brewed Soy Sauce combines with garlic and
crushed red peppier to "add the spice and
everything nice" to the marinade and
pi uant, spicy -hot sauce. Stir -fry cooking is
noonly delicious, it's easy, nutritious,
ire ensive and gets the cook out of the
kite en - fast!
whole chicken breast, skinned and boned
4 tablespoons Soy Sauce, divided
1 tablespoon cornstarch
1/2 teaspoon sugar
1 clove garlic, minced
4 teaspoons cornstarch
'/4 to /a teaspoon crushed red pepper
2 tablespoons vegetable oil, divided
2 carrots. cut diagonally into 1f8 -inch slices
1 onion, chunked and separated
2 small zucchini, cut in half lengthwise, then
cut into diagonal chunks
'/. cup unsalted peanuts
Hot cooked rice
Cut chicken into thin, narrow strips.
Combine 1 tablespoon soy sauce and next 3
ingredients; stir chicken and set aslide.
Blend 4 teaspoons cornstarch, remaining soy
sauce, red pepper and 1 cup water; set aside.
Heat 1 tablespoon oil in wok or large skillet
over high heat. Add chicken and stir -fry 2
minutes. or until chicken is tender; remove.
Heat remaining oil In same wok. Add carrots
and onion; stir -fry 3 minutes. Add zucchini;
stir -fry 2 minutes. Stir in chicken and soy
sauce mixture: cook and stir until sauce boils
and thickens. Just before serving, stir in
peanuts. Serve immediately with rice as
desired. Makes 4 to 6 servings.
