This Society met in annual conven-
tion in the Presbyterian Church, Brus-
sels, on the 17th inst., and was largely
attended. The various reports present-
ed by the different organizations were
most satisfactory and encouraging,
showing that considerable progress had
been made in each department. Help-
ful and inspiring addresses were given
in the afternoon meeting by the Pre-
sident, Miss Weir, a returned Mis-
sionary from India, and Mrs. Malcolm,
who spoke of Methods of work in Mis-
sion Bands. Mrs. McNab ably led the
discussion on "Our work, its encourage-
ments and diacouragements," while Mrs.
Stewart and Mrs. Ferguson satisfactori-
ly disposed of the Question Drawer.
The Society contributed for Mission
purposes the sum of $1875, being an ad-
vance of $143 over the contribution last
year. There Was a large gathering at
the evening session, when splendid ad-
dresses were given by Messrs. Hastie
and Perrin, and by Miss Weir, who
spoke most entertainingly and in-
structively on Mission Work in India.
Music was furnished by the Brussels
choir and Mrs. Hastie Soloist. The fol-
lowing officers wore elected for ensuing
year: -President, Mrs. Jno. Ross, Brus-
sels, (re-elected); Vice -Pres., Mrs. Dr.

cries of Minnesota, especially in the
western part of the state, 1 have visit-

and whole milk, and often --yes, too
oftent-I met with the assertion by the
buttormaker that he doesn't need a
starter at his factory, that the hand
separator cream is starter enough,
and, in fact, he actually does use it
with which to ripen cream skimmed
at the factory, says B, K. Slater in
Creamery Journal. He does not con -
eider it a real starter perhaps, but by
mixing his whole product together he
is virtually carrying out the princi-
ples of cream ripening, but without re -

gard to results. I will admit that in
some instances this is absolutely nec-
essary, as fn the case of the butter -
maker who receives a large amount,
perhaps nearly all hand separator
cream. At the majority of our fac-
tories, however, a small amount of the
raw material is cream, and in such
cases it is quite possible to keep the
hand separator and factory cream sep-
arate until the latter is ripened by the
aid of a good starter. Cool the hand
separator cream if sour down as low
'as possible and keep it in a tank or
other receptacle until the cream from
the factory machine is ripened and
cooled to churning temperature, and
'then the two products may be mixed
,together. The ripening process should
i.}oe so conducted that the different
batches of cream may be mixed togeth-
et the evening of the same day they
'ate received at the creamery.
1 Good Time For Dairymen,
1 Claims are being made that Wall
sti~eet is declaring hard, times for this
country during the next few years,
;writes a contributor to Creamery
Journal. The dairymen can feel con-
tented in the knowledge that the mem-
bers of Wall street have very few, if
any, strings on the dairymen to pull.
he price of meat and oftentimes the
ifferent grains is said to be controlled
by a few men, but butter goes on an
bpen, uncontrolled, competitive mar-
ket, which is being guarded against
unjust and fraudulent competition by
our zealous coworkers in the National
Dairy union. The signs of hard times
as predicted by some men are in some
ways encouraging to dairymen. In the
words of one of our loyal Iowa dairy-
men, "Hard times make farmers milk
more cows."
Effect of Air on Cream,
Professor Leze, a noted dairy expert
of France, makes the folloering state-
ment regarding the effect of air on
cream and its relation to flavor in but-
ter: "It is easy to prove that air is det-
rimental, for the superior, or first, lay-
ers of cream, those exposed to the air,
have always a disagreeable flavor, and
they are rejected in consequence. Fi-
nally we may point out that the most
apparent and genuine superiority of
cream raised spontaneously over cream
mechanically separated is especially
found in this absolute want of mixture
with air when the cream rises by gravi-
tation, It is also interesting to show
that if we add to cream certain .fer-
ments free from oxygen the quality is
much improved. We insist upon these
new ideas as of the highest practical
importance."
June Conditions In the Stable.
Dairy stables can be made to sub-
stantially give June conditions, and
these essentials are light, warmth, air
and succulent food. That is all a cow
gets in June, says John Gould in Stock-
man and Farmer. First make the sta-
ble close, so as to exclude the common
ingress of outside air; make the ceil-
ing overhead so that the air as warm-
ed by the bodies of the cows is retained
in the stable and not diffused lnto
space. Put in plenty of windows, so
as to get the sunshine into the stables.
If you are afraid of the loss of heat at
night, put some shade on for nights.
Have a clean floor of some kind. Ce-
' inent with. roughened surface to pre -
'vent slipping slakes a floor that can
be kept clean and dry, and such a floor,
i with the aid of the sunlight, is never
foul, redolent with ferments or a cree-
1 tor of noxious gases. With good bed-
ding, absorbents in the gutter and a
nitrogen catcher like plaster, South
Carolina rock or even road dust for the
gutter, the smells of a stable are pre•
.vented. ............. ........ ,+n ease ...s.,....,.....
