Evening Post, "the 8ornpound is a vege-
table substitute .for Meat, containing
the same nutrients 'in the sarne propor-
tions, and easy of digestion and assimi-
lation. The *tuff •of which it is made
is wheat -gluten, water and peanut
meal. , Of couree, peanut meal Is ex-
ceedingly rich in protein (the eesh and
blood making • substance of fel ds),
while its oil is st„ capital fuel for the
body. Wheat -gluten furnishea the bal-
ance of the elements required to
tate meat. •In preparing the .mixture
the gluten is. first washed to free it

Finally, the mixture is cooked in seal
ed cans for from one to three hours,
ate temperature of from 212 to2a0 de-
grees Faarenheit; the result ebeing a
total change in the consistency and ,
flavor of the contents. It le the cook-
ing, indeed, that seems to 'give a pea
fauliar quality to the product."
