A WESTERN PREMIER.
DAIRYING IN SWEDEN.
The English journal Farm and
Home, in discussing dairying in Sweden
and especially the methode used with
the byeproducts, says:
There are two points in which the
people of Sweden are not behind the
foremost nations of the world, and those
are inventions and dairying. The peo-
ple of Sweden seem to have a natural
talent for making inventions, and some
of the most important of them applied
to dairy science have come to us from
this northern country.
One of the great objects of the Swed-
ish dairyman is to increase his income.
Whether this increase comet) from a
higher price received in the market, or
from a cheaper manufacture, from a
larger dairy product or a more profit-
able use of refuse of the dairy, it is
equally welcome.
With reference to this last item,
naruely, the profitable disposal of all
refuse materal, a Swedish dairy inspec-
tor, Mr. Rhenstrom, has worked out. a
method by which the so-called refuse
becomes an item of considerable impor-
tance; in fact under his methode there
ceases to be such a thing aa refuse in
the dairy. Whey to be run into the
gutter, or akimmilk to be fed at little
profit to the calves or pigs, in Sweden,
are things of the past.
In the moat modern method of Swed-
ish dairying, skim -milk -sweet and
sour -and whey become valuable raw
material, which, properly handled, adds
much to the income of the dairyman.
The process Is as follows:
Skim -milk is handled as in the man-
ufacture of skim cheese, except that
more rennet is used, and the precipita
tion is made at a higher temperature in
older to be more complete. The pro -

The Hon. Theodore Davie, premier
of British Columbia, was in Toronto a
few days ago on his way house after a
months visit to Ontario 90 private
affairs. Mr. Davie said to a reporter :
"We distinctly desire to diecourage ths,
emigration or migration of laborers to
British Columbia just now." "There
is no work for them, and for their own
sakes, until the couutry is further
deliatoped, we advise Them not
come. British Col'umbia", he contnu-
ed, "is country of immense possibili-
ties, and we are most sanguine that
many of the latent resources will be
developed in the near future. When
they are then there will be ample room
'for laboring men."
Its reply to an inquiry as to the pro-
gress of the scheme for the settlement
of Highland crofters, which has been
aided by a grant from the Imperial
government, Mr. Davie said that the
Commercial company, which is to
manage the scheme, is now being
organised in London, and will have a
capital of £100,000. By the terms of
their charter in British Columbia the
company will have to be thoroughly
organised by the end of the present
year and work commenced immediate•
ly.
"There ie a general impression
abroad," said the premier, "that the
scheme •applies exclusively to crofters.
This, however, is not correct. It was
started with a view of bringing out
thoroughly efficient fishermen, crofters
or otherwise, to amid in developing
our deep sea fisheries."
"How is Lord Aberdeen's venture in
fruit farming in your province progress-
ing 2" next asked the reporter.
"Although I have not personally in-
spected the farm," Mr. Davie replied,
"I am informed that the project is
meeting with the most encouraging
success and will, it the near future, be
an extremely profitable investment for
Lord A.berdeen. The farm is not by
any means to be devoted exclusively to
the cultivation of fruit, but is being
laid out largely for cereals, for which
it is admirably adapted."
"I suppose British Columbia antici-
pates immense benefit from the build-
ing of the Canadianffestern railway ?"
inquired the reporter.
"Unquestionably," said Mr. Davie.
"The railway will open up one of the
richeat tracts in the province, both for
farming and mineral wealth. It will
throw open the rich lande or Van-
couver Island and the mineral districts
of the Cariboo country. 11 18 chartered
to run to the Yellowstone of Jasper
pass, and will not only serve the fertile
territories of the Peace river, but will
doubtless eventually obtain eastern
connection.' With regard to the
general prosperity of the year in
British Columbia, Mr. Davie said that
the smallpox scare had had a serious
effect' on ,trade, which, however, was
now fast recovering.
