The breakfast in vogue:among a large
part of our population—the hot breads
and griddle -cakes, eaten Often with the
most, cloying sweets; the croquettes and
other fried dishes; the .ham, veal, pork,
or liver so often sacrificed, or rather
sacrificed to, at our morning tables—are
disereditabie to our civilization. Among
the most widely traveled and -the
wealthiest of our people there is no
doubt a tendency toward uniform break-
fasts, and of a plain and nourishing
quality. This is detoutly to be wished
for, not only for the sake of the diges-
tions -of our people, but for theepeace of
perplexed housewives, whose cry -4as
been for generations, What shall - we
have for breakfast.
The lack of appetite for this first meal
of,the day is a most serious obstacle to
the housekeeper's success in providing
something satisfactory: Many people
find a glass of lemon juice and water, an
apple_er some other tart morsel, just the
appetiser needed. 'These crude &dela are
too strong and biting for the stomach of
others. It is desirable, however that as
little choice as possible be given at a
time when most people would rather
go without anything 'than• take the
trouble to decide between several dishes;
no one of which is deeired. Cereals,
delicately cooked, have long been recog-
nized as a most suitable and nourishing
food to give the stomach afterits long
fast. There is nothing so dainty in the
way of edibles (excepting fruit) as a well
cooked egg. Scarcely 'any one, even -the
most unwilling, can resist its charms.
Those who need something stronger
should hive their gently browned chops
or juicy steaks. A baked potato never
comes amiss. Fried ones had better be
left out. Very few People -can afford to
go. entirely without fruit for breakfast.
Those who cannot take it at the- begin-
ning can usually relish it and find it
beneficial at the end of the meal.
Warmed -up dishes can be Made satis-
factory for breakfast only by the most
exquisite. workmanship and most taste-
ful garniehing. . ,
We plead for thelfresh, simple, health-
ful breakfast toward which modern
methods seem to be, fortunately, tend-
ing. A daybegun with such a break-
fast is worth a dozen begun -with griddle-
cakes and fried oysters or any of their
near relatives.

the cream is very sour, a bit more soda
should be used, or a spoonful of butter
softened in one-half a cup,of warm water
may be used instead of cream.
The gingerbread will shrink from the
edge of the pan- when acme. Loosen
further by tunnin g a knife around the
pan, hold over a flat plate or platter,
turn gently on a towel held in one hand,
and then turn back on the Pate. When
wanted hot, cut through the crust only,
break or tear apart, as cutting would'
make it solid. -
The sauce may be left till cool in the
pan where it was cooked and then turn-
ed into a glass dish for the table. .
An hour before supper we go to the
kitchen and put one.quart of milk.in a
double boiler or pail set in hot water to'
make milk gravy for the toast. While_
that is scalding, the stale bread can be
sorted and made ready for toasting.
Graham muffins left from breakfast
make quite as nice toast as white slices.
Then arrange the table, putting on the
sauce and gingerbread, milk gravy for
the toast. In is large saucepan melt one
level tablespoonful of butter for, each
cupful of milk, then add as many round
spoonfuls of fieur ; stir till it bubbles
and is thoroughly mixed,; the flour is
cooked much goner than if mixed with
the milk. Now add a quarter part of
the milk and stir till smooth, then an-
other portion, and so on till it is all
mixed into smooth, thick gravy. If too
thick, add a little more milk. or water,
and part water may be used instead. of
all milk. -Now neat it ;• a teaspoonful
will be the right amount unless the but-
ter was very salt.
. News Notes.
—The strike of the German colliers
is spreading and there are; now probably
90,000 men out. The presence of the
troops has an irritating effect, and some
serious conflicts hav.e taken place. The
coal oine owners and the strikers have
appointed committees to confer together
and good results are hpped for. .
—.May 8th.—Three robbers entered
the office of Frank Costello, postmaster
and storekeeper at Florrissant, near
Colorado Springs,Coliirado'on the night
of the 7th lust and robbed the place of
$400 and escaped. They were pursued
and overtaken by a party of citizens.
A fight ensued, in which one of the
pursuing party was killed, and the
robbers reached the mountsins. The
deputy sheriff and a well -armed p09/93
started after them early the other morn-
ing and overhauling them another fight
occurred. The robbers werklibilged be-
hind., a barricade of rocks, and after a
terrible fight of half an hour, one of the
robbers Was 'killed and another. woun-
ded,- but the third still holds but and
until his ammunition- is exhausted there
is no prospect of his Surrendering;
—Rev.. Father Damien, widely known
as the leper priest Of Molokai, died at
Kalawa, - Hawaii April 10. Father
Damien was born in Belgium in 1840 and
went to Hawaii in .1864. For the last
sixteen years his labors were confined to
the leper settlement at Molokai, where
he contracted the dread disease which
cost him his life. ..
—The Custom authorities on- Friday
seized 1,000 pounds of smuggled opium
on board the steamer. City of New York,
from China. ,The stuff was marked "Ah
King, Panama," and its value, with the
duty, is $16,000.
—South Perth Farmer!' Institute will
be held in Mitchell on Tuesday And
Wednesday, the 4th and 5th of June.
