With care the amount of sugar
allowed each family should be suf-
ficient for the ordinary cooking,
but with fruit season and holiday
visitors there will be a strain on
the sugar allowance. Dieticians
are being asked to encourage the
use of corn syrup and honey as
substitutes, Many are using them
entirely in their cooking.
From the laboratory of one of
Canada's most noted food experts
and dieticians come the follow-
ing recipes,—
Rhubarb Custard Pie
1 egg
'k
eup white sugar
'.4 cup corn syrup
'.43 teaspoon salt
1 tablespoon cornstarch
1 tablespoon melted butter
8 cups rhubarb cut in one -inch
pieces
Method: Line a nine inch pie
pan with pastry. Beat egg till
light. Add the sugar, syrup, salt
and corn starch and the melted
butter. Add rhubarb and pour
into raw shell, Cover with criss-
cross lattice work of !ci inch strips
of pastry. Bake in hot oven for
15 minutes; reduce hent to 350°
and continue cooking for 25 to
90 minutes or until rhubarb is
cooked.
Orange Cake
Si cup shortening'
V1 cup brown sugar
aft cup corn syrup
eggs
1 orange, 1 cup raisins put
through food chopper
cups pastry flour
1 teaspoon baking soda
teaspoon nutmeg
% teaspoon cinnamon
% cup sour milk
Method: Cr'cant shortening gra-
dually; add sugar and corn syrup.

Mix thoroughly all ingredients
except creast. Cook until thick.

3 tablespoons butter
1 tablespoon corn syrup
'% teaspoon salt
2 cups icing sugar sifted
2 tablespoons ci'eitin or hot
water
1 teaspoon Vanilla
Fresh Strawberry ice
Ra cup white 11 g:.1
2 cups water
'N cup Col'll syrup
1 cup crushed flesh straw-
berries ( pulp and juice)
1 tablespoon lemon juice
Make a syrup by boiling to-
gether the sugar, water and corn
syrup for ten minutes. Cool; add
the strawberry pulp and juice.
Add the lemon juice. Pour into
the freezing tray of automatic
refrigerator and freeze, stirring
every five minutes until mixture
begins to set. Serves six or eight.

CEREAL CRUMBS TAKE A BOW

There's no need to struggle with a food -chopper er grater when
your recipe calls for dry crumbs. Here's a much easier and quicker
sway: Place crisp cereal flakes between two folds of a towel, roll to
desired fineness, shake the crumbs into a bowl — and there you
are! Crumbs, a clean towel and a rolling pin.
This is ono of those cases where the easiest way is the best way.
For the toasty flavour of crisp corn flakes or oven -popped rice adds
an extra finish that's hard to beat. Here are recipes in which cereal
crumbs are an important ingredient:
Crumb Kisses
'h cup butter 1 teaspoon baking powder
1 cup sugar 1^2 teaspoon salt
1 egg 1 cup finely cut dates
1'4 cups flour 'Ss cup corn !'lake crumbs
Cream butter and sugar thoroughly; add egg• and bent until
fluffy. Sift flour with baking powder and salt; add to first mixture
along with dates. Mix well. Roll one teaspoon of mixture in cereal
crumbs and flatten down 011 greased cookie .sheet. Bake in slow oven
(325`1.) about 20 minutes. Remove from pan while ttartu.
Yield: 3 dozen cookies (1% inches in diameter).
Browned Paprika Potatoes
6 medium potatoes 1 cup cora flakes
1 tablespoon melted fat or 1 teaspoon paprika
drippings 1 teaspoon salt
Pare potatoes and cook in boiling water about 20 uta,utes, Drain
and brush with fat. Roll cora flakes into tine crumbs and mix with
paprika and salt. !loll potatoes in crumb mixture until well covered.
Bake in shallow greased baking prat in moderately hot even, (425°10.)
about 35 minutes.
Yield: 6 servings.
Oven•Fried Fish
1 pound fish fillets or 1 cup milk
tresh fish 1 tablespoon Sait
4 cups corn flakes •1 teaspoons salmi el.
Cut fish into serving pieces, allowing about la p0ulul for evil
serving. 1io11 corn flakes into tine eruulbs. Add snit to milk, Dlp
fish to milk, then in 010111bs and arrange on well oiled halting sheet.
Sprinkle all 01er top of fish, stake in \AI'S' hot ut eu ' ; 0u I'.) 1.2 to
1b minutes.

After July 1st no one will be able to pur-
chase sugar for regular domestic use without
turning in a ration coupon.
Application cards for coupon rationing for
sugar have now been mailed to every house-
hold in Canada. But, in an undertaking so
vast, some homes may have been missed, or
some cards may have gone astray. So, no
matter where you live, whether it is in areas
served by letter carrier or not, if your appli-
cation card is not already on its way to
Rationing IIeadquarters, you should wait
no longer.
After filling in the card, according to the
instructions on the pamphlet which was
delivered with it, just drop the card in the
nearest mail box or post office. It needs no
forwarding address.

NO EMPLOYER HEREAFTER SHALL IIIItE ANY PERSON, MALE
OR FEMALE, WITHOUT THE APPROVAL OF A SELECTIVE
SERVICE OFFICER IN AN EMPLOYMENT OFFICE OF THE
UNEMPLOYMENT INSURANCE COMMISSION
Whenever a vacancy occurs, or additional staff is required, or a lay-off
of staff is anticipated, the employer shall noti{y the local Employment Office.
He may engage only persons referred to hint by, or approved by, the local
Employment Office.
A local Selective Service Officer may revoke at any time, on not less than
ten days notice, any approval granted by Itim.
Appeal from a Selective Service Officer's decision may he made in writing
within ten days to the Divisional Registrar of the National War Service Board,
and the decision of the Board shall be final.
EXCEPTIONS
This order does not include employment: (1) In agriculture, fishing,
hunting or trapping; (2) Subject to the Essential Work (Scientific and Technical
Personnel) Regulations, 1942; (3) In domestic service in a private home; (4) Of
students after school hours or during holidays (hut does include employment
during Summer Vacations); (5) In part-time work which is not the principal
means of livelihood; (6) Casual or irregular employment for not more than
three days in any calendar week for the same employer; (7) Under the Govern-
ment of any Province.
This order does not affect Re-employment: (1) Within not more than 14
consecutive days after the last day a person worked for the same employer;
(2) After sickness or disability which caused the suspension of the employment;
(3) On resumption of work after a stoppage caused by an industrial dispute;
(4) In accordance with a collective labour agreement which provides for prefer-
ence according to length of service or seniority; (5) On compulsory re -instate-
ment after Military Service.
Until further notice from the Director of National Selective Service or a
local National Selective Service Officer, any employer may temporarily engage any
employee, if he submits within three days to a local office an application in dupli-
cate for the approval of such engagement. Sucli application shall state the
insurance book number, or the insurance registration number, (U.I.C. Form 413),
name, address, age, sex, occupation of such employee, the name of his or her
most recent employer, and the date he or she left employment with such employer.
Penalties for infringements of this order provide for a fine up to $500.00, or
imprisonment up to 12 months, or both fine and imprisonment.
This order superseder previous National Selective Service Orders
respecting restricted and unrestricted occupations.
