Here's something to add to all
the other excitement in your house
Christmas morning. We suggest
you serve these day, tender muf-
fins made with chopped raw cran-
berries at breakfast on that im-
portant day. They may be baked
ahead of time if you prefer and
-reheated at serving time . , or
the dry irtgredien.ts may be as-
sembled and covered the night be-
fore, ready to be mixed with the
liquid ingredients in the morning.
They're real palate-pleasers when
served piping hot and spread with
butter or margarine and honey or
whatever you choose.
Cranberry Muffins
Yield -One dozen muffins.
3.4 cup chopped raw cranber-
ri e -s
1 teaspoon grated orange rind
21/2 cups once -sifted all-purpose
flour .
Or 3 cups once -sifted pastry
flour
5 teaspoons baking powder
1 teaspoon salt
1%_ cup fine 'granulated sugar
1 egg. well -beaten
1 cup milk -
1 teaspoon vanilla
V). cup shortening, melted.
Grease 12 average -sized muffin
cups. Preheat oven to 375 deg.
F. (moderately hot). Pick over,
wash and drain well and chop suf-
ficient fresh cranberries to yield
the required 3/4 cup prepared cran-
berries. Prepare orange rind.
Sift the all-purpose or pastry
flour. baking powder, salt and

Christm� salads
There's nothing that adds more
color to a buffet party supper than
an assortment of shimmering,
moulded salads. They are. particu-
larly good for serving at this time
of year, not only because they lend
themselves to an almost limitless
variety of shapes and decorations,
but because they're so easy on the
hostess.
Moulded salads are usually made
with a gelatine base but sometimes
the ones that arefrozen, such as
Camembert Cheese- Mousse, do not
require any gelatine, In any case,
it is important that moulded sal-
ads be served on cold plates, so if
you are serving them along with
something hot, plan to serve one
or the other in a side dish.
Here are five "make -ahead" sal-
ad '1•eeipes that you will want to
try during the Christmas season.
You'll find that they can save you
many last-minute worries about
what to serve at your holiday par-
ties.
Jellied Chicken Salad
2 tablespoons gelatine
V2 cup cold chicken stock
2 cups hot chicken stock sea-
soned with salt, paprika
and minced chives
PA cups diced cooked chicken
1 cup chopped celery
1/2 cup chopped apple
V4 cup chopped green pepper.
Sprinkle gelatine over cold chick-
en stock and let stand five min-
utes. Stir in hot seasoned chicken
stock. Let cool and partially set,
then add remaining ingredients
and pour into jelly mould. Chill
until firm. Unmould and serve on
a bed of lettuce garnished with
thin radish slices and watercress.
Serve with mayonnaise.
Camembert Cheese Mousse
yz ib. Canadian Camembert
cheese
sugar together into a bowl. Mix
in prepared cranberries and orange
rind.
Combine well -beaten egg, milk,
vanilla and melted shortening; stir
liquids into dry ingredients just
enough to moisten -batter should
appear lumpy, Three-quarters fill
prepared muffin cups with batter.
Bake in lireheated oven about 25
minutes. Serve warm.

sauce
1 cup whipping cream
2 egg whites.
Remove' skin from Camembert
Mix with mustard and Worcester-
shire sauce. Whip cream. Fold
into cheese. mixture. Beat egg
whites until stiff but not dry. Fold
into cheese -cream mixture, Pour
into a greased mould or freezing
tray. Freeze for two to three hours
to the consistency of ice cream.
Unmould on crisp lettuce. Serve
as an appetizer. Yield: 3 cups.
Cranberry and Apple Juice Mould
2 cups raw cranberries
31/ cups apple juice (1 20 -ounce
tin)
2 tablespoons gelatine
3/4 cup sugar
Dash of salt,
Heat cranberries with 1 cup of
apple juice. Bring to boll and
cook five minutes or until soft.
Press through sieve.. Soak gela-
tine five minutes in one-half cup
of the apple juice. 'Add remaining
apple juice (1 cup), sugar and salt
to cranberry mixture and heat to
boiling point, Add soaked gelatine
and stir until dissolved. Pour in-
to one large ring mould or six to
eight individual moulds. .rinsed
with cold water or brushed with
oil. Chill until firm. Unmould and
serve.
Note: This may be used as a
salad with mayonnaise or as a
dessert with sweetened whipped
cream.
tin) Tomato Jelly Salad
21/2 cups tomato juice, (20 -oz.
F.G. white .pepper
V2 teaspoon salt
V2 teaspoon celery salt
2 teaspoons vinegar
2 tablespoons gelatine
V2 cup cold water.
Combine tomato juice, white
pepper. salt. celery salt and vine-
gar in a saucepan and heat to boiI-
ing. Meanwhile soak gelatine in
.cold water for five minutes. Add
gelatine to hot mixture stirring to
dissolve. Cool. Pour into mould
and chill until set. Yield: three
cups.
Cranberry -Orange Mould
2 cups raw cranberries
1 small orange
1 cup sugar
Dash of salt
11/2 tablespoons gelatine
1/ cup cold water
11/2 cups apple juice.
Put cranberrihs and orange (rind
and all) through the food chopper.

with the sugar and Iet stand over
night. Soak gelatine in the water
for five min.utes.--Heat apple juice,
add gelatine and stir until dissoly-
ed. Stir in the cranberry -orange
mixture. Pour into one large ring
mould or 6 to g individual moulds,
rinsed with cold water or brushed
with oil. Chill until 'firm. Unmould
and serve with salad dressing. This
is nice with sliced chicken or tur-
key or chicken or turkey salad.

So often we forget that the big things like
the oak came from the little acorns! The
little thing just don't seem important.
And so it is with voting. It takes but a
moment to cast a ballot, but so many of us
don't bother. We say to ourselves: "What
'difference does it make?"
$ut it does make a difference. We just
don't stop to think that one of the basic'princi-
ples of our democratic way of life, our very
freedom, is the right of every man, every
woman, to the secret ballot.
If through carelessness, lack of .interest
or just plain laziness, we fail to exercise the
privilege of voting, we create a condition
which can be the first step towards a denial
of our freedoms.
