2 tsps. baking powder
1 tsp. salt
'/a tsp. ground mace
1 cup butter or margarine ,
s/4 cup fine granulated sugar •
3/4 cup lightly -packed brown
sugar
1 egg
1 tsp. vanilla.
Measure the all-purpose or pas-
try flour. baking powder, salt and
mace into sifter. Cream butter or
blend in white and brown sugars.
Add egg and vanilla; in well. Sift
dry ingredients into creamed mix-
ture, part at a time, blending well
art.r each addition. .Divide dough
into four parts; wrap an.d chill.
Roll out dough, one part at a
time, to /s -inch thickness and cut
into fancy shapes as suggested be-,
low, working free-hand or using
cardboard shapes or fancy cookie
cutters; decorate. Arrange decor-
ated cookies on ungreased baking
sheets. Bake in a moderate oven,
350 deg. F., 8 to 10 minutes. Cool
on cake racks. Yield: About six
dozen fancy shapes.
Fancy Shapes and Decorations
1. CANDY CANES—Cut one por-
tion of rolled -out dough into cane
shapes and paint on diagonal
stripes, using one part red food
coloring and 6 parts cold water.
2. CHRISTMAS WREATHS—Us-
ing a 3 -inch serrated cookie cut-
ter, cut one portion of rolled -out
dough into cookies; using a simi-
lar 114 -inch cutter. cut out cen-
tre of each cookie leaving a wreath
shape. Decorate wreaths with
slivers ofa candied citron and bits
of candied cherries. Decorate
centre cut-outs too.
3. CHRISTMAS BELLS—Cut an-
other portion of rolled -out dough
into bell shapes' and press one
large silver dragee into base of
each bell to represent a clapper.
Bake and cool. Combine '/z cup
icing sugar, few drops almond ex-
tract and sufficient milk to make
a very stiff icing; tint deeply with
red food coloring. Turn icing into
decorating tube 'fitted for writing
and outline base of each bell.
Draw a bow knot or other decora-
tion on each bell; let stand until
icing is dry.
4. SANTA CLAUS—Cut last por-
tion of rolled -out dough into Santa
Claus shapes and bake, Working
on one figure at a time. paint
where St. Nick's suit would be with
unbeaten egg white and sprinkle
with red granulated sugar; brush
off excess sugar. (To make red
decorating sugar. put a scoopful
of granulated sugar in a clean dry
jar; add a few drops red food col-
oring; cover jar and shake until
coloring is evenly distributed. Re-
peat until sugar has reached de-
sired depth of color).
