RAISIN PUFFS. �
One-half teacup of sugar, one-half tea-
cup of milk, two eggs, two teaspoonfuls
of baking.powder, a &ch of salt, flour
enough so that the batter will drop from
the spoon. Stir in a cup of, seeded and
. chopped raisins. - BuPter teacups and
fill half full of batter. Set the cups in
a steamer, but on the
I � coveri and steam
one hour. This quantity; will - make six
or seven cupfuls. Eai hot, with plenty
of liquid sauce. X,pples, cherries,
or fiis can be sub tituted to give a
change.

� One pint of bread cl -umbs, one cup of
suet shredded and c iopped fine, one
Pound of chopped figs three eggs, one
eq.0 of sugar, a pinch 4 if salt. Mix thor-
oughly, and pour or a rape into a but-
tered mold, and -steam three hours. The
recipe will furnish a dessert, . for an ordi-
nary family, for two meals. For the'
'
secon�d day. st�am until hot through.
Serve vvith the follow ng
SAVC1 :
Cream'. thoroughly one cup of butter.
Add two cups of whit) sugar, a little

grated nu'tmeg,on'e tablespoonful of flour,
a half -cup of raspberry vinegar. Just be-
fore serving—for it spbils by standing—
add two tablespoonfuls of boiling water,
then set the basin on the range, and let
the ingredients conic, to a boil. .

One cup , ree-f9urths of a
cup'of butter, one cu' and a half' of

flour, one cup of jam, three eggs, three
tablespoonfuls of sour cream, one tea-
spoonful of soda dissolved in a little
water, cinnamon- and'�utmeg to taste.
Pour into a buttered Imold and steam
two hours. Served w.th a rich sauce

One cup of molassesi, one cup of sweet
milk, onecup of shredided, chopped sluet,

one cup of seeded, chc pped raisins, ,and
th6e cups of- flour. Stir into the
molasses one teaspoonful of -soda.
Steam three hours, a ad serve with any
liquid sauc

One -cup of sour inilk, scant half -cup
of molasses, two tables'poonf uls of brown
sugar, one teaspoonful, of salt, one large
teaspoonful of -soda, two cups of Graham
flour, three-fourths of a' cup of wheat
flour. Steam two and a -half hours, then
bake half an hour in &'slow oven.

Two cups of sour milk, two cups of
Indian meal, one-half bap of flour, two
teaspoonfuls of soda, 'a pinch. of gal , t,
flour tablespoonfuls of I molasses. Steam

and agree to be pleasant and obliging
hereafter, you can have the $50 back,
but under no other condition."

� The St. Louis. Lunfberman remarks
thatforsomt, years back it has been a
frequent thing to hear people talk about
the "craze"' for oak. The large uEe of
it was set down as due merely to a pass-
ing fashion, and as having no more solid
and enduring foundation than the ca-
price of the pub] ic. It wa--s said 'to . be
only a " fad," which the next ne,w moon
would in all probability bring to an end.
There can be little question that through
this characterization of the popular

that the demand could not be. relied up-
on from one season to another, and, that
it was not a -safe basis upon which to

make large calculations respecting the
future of the business. Latterly the
notion has begun to give place to a con-
