Useful- Recipes.
Feather Cake. -Two aups of flour, one-
eup of milk, one egg, one cup of sugar,
half a cup of butter, half a teaspoonful
of soda _one of cream of tartar. Flavor
with fe'Mon.
A good recipe for bean or pea soup.
Soakthe beans, if dry, over night, and
boil until soft Press them through
• calander. For each quart of
liquid allow one teaspoonful of
a sugar, one teaspoonful of • salt,
and a small 'saltapoonful `, of pepper.
Add a. beaten egg, a cup of milk, and
two tablespoonfuls of butter. Some like
to add a little lemon juice on taking up.
Canned 'sweet ,corn added, is said to
make good succotash for winter.
A recipe for making a nice jelly for
invalida other than calfs foot -Half a
raw chicken poundecl with mallet, bciaies
and meat together; cover with cold
.water and heat very- slowly in a covered
vessel. Let it simmer until the meat is
.in rags and the water reduced one-half.
Strain and press through a collander or
coarse7e1oth. Seasen to taste, and re-
turn to the fire for five minutes. Skim
when cool. Keep it 'on ice, and give it
to the patient add. For, a change the
jelly can be made into a '!sandwich with
thin slices.of bread and butter, and will
be found very nonrishing.
"Young Housewife" would like to
know what are the proper accompani-
ments for different kinds of meat. Here
is a : Roast lie.cf-Lagrated horse-,
radish; roast nolir-L-apple sauce ; roast
veal -tomato or nu sh roe m sauce; roast
mutton, hare, VW ison and various kinds
,of game--sred currant jelly; boiled mut-
-ton-caper sau ; boiled chicken -L.
bread swipe; roast lamb -mint sauce ;
roast turkey-cianberry sauce; boiled
tu -key-oyster sauce ; broiled 'fresh
m ckerel-gaoseberry sauce; boiled blue

sh a -boiled rice and salad ; compote of
pi te ns -mushroom sauce; fresh sta-
ll -green peas, fennel or eream sauce;
Nast goose -apple sauce; c rry-grated

Ptpached Eggs. -Beat x eggs, and
pour:them into a pint of, milk, which
has been heated in a far:ma-kettle near-
ly to boiling, add half a Oaspoonful of
salt ; stir. . steadily, until the mixture
thickens, whieh will be in a very short
time; then remove from the stove, and
stir an instant ionieer. It should be a
little thicker than boiled lustard. Pour
upon slices of hot buttered' toast and
serN!e.
Dropped Eggs. -Have water 'boiling
in a small saucepan; salt it, a-nd after
in an egg into a cup, slip it into
the water, and when cooked until the
'yolk just shows through the transparent
white it is done. It must not harden ;
take up the er''' with a skimmer, and
place it upon a ;fatter Set over a kettle
or hat water, In this way do as many
as are needed. Lay a bit of butter on
each, and, a dash of pepper before serv-
iid i; er they may be served on toast.
&rambled Eags.-Heat in a sauce-
pan a tablespoonful of butter; When hot
break five or six' eggs into a bowl, and
pour them into the pan, stir them until
they are set, not letting thein become
drv or hard. Add a little 'salt while
c oking, and serve on buttered toast.
An Irish Stew. -Two pounds of mut-
t n from the neck or loin two pounds of
otatoes peeled and sliced. Put a layer
of potatoes in the bottom of the kettle,
*en the mutton and onions; then an-
other layer of potatoes and mutton and
onions, and repeat this until the mutton
and vegetables are all used. Add one and
a half teaspoonfuls of salt, a small tea-
spoonful of white pepper, three gills of
broth or gravy and two teaspoonfuls of
mushroom catsup. Cover the stewpan
very closely so as to prevent the steam.

one Pint of milk and two tablespoonfuls
- of sugar`and flavor with. vanilla. Place
the custard in saucers, cover with the

Jellied veal --an excellent warm
weather dish.—Get a knuckle of veal,
let the butcher cut it into three pieces,
boil slowly in just enough water to
cover* take out of water when done,

flavoring,) -strain It liquor so as to be sure -
